Description

With the Thermomix® traditional curd pockets Watruschki can be easily prepared. This recipe for bread and rolls contains milk, yeast, sugar, butter and curd. The preparation takes a total of 120 minutes, the active working time is about 45 minutes for 18 servings. Ideal as festive finger food, for breakfast or for lovers of Russian baked goods.

Ingredients (14 ingredients)

  • 250 g Milk
  • 20 g Yeast
  • 30 g Sugar
  • 50 g Butter
  • 1 Stück Egg
  • 500 g Flour
  • 1 Prise Salt
  • 1 Pck. Vanilla sugar
  • 600 g Grainy cream cheese
  • 1 Stück Egg
  • 100 g Sugar
  • 2 Pck. Vanilla sugar
  • 1 Stück Egg yolk
  • 1 EL Milk

Preparation (11 steps)

Prepare cream cheese

Place grainy cream cheese in a sieve and refrigerate overnight, so that the excess liquid can drain off.

Prepare dough

Thermomix® Setting

Add milk, yeast, sugar and butter to the mixing bowl and 2.5 min./37°C/speed 2.

Knead dough

Thermomix® Setting

Add egg, flour, salt and vanilla sugar and 3 min./kneading stage.

Let dough rise

Place the dough in a lightly oiled bowl and let it rise covered for about 1 hour.

Clean mixing bowl

Rinse and dry mixing bowl.

Shape dough

Place the dough on a lightly oiled work surface, form into a long sausage and divide into approx. 15 equal pieces. Form these into balls, place on a baking sheet and let rest covered for about 20 minutes.

Prepare filling

Thermomix® Setting

Add grainy cream cheese, egg, sugar and vanilla sugar to the mixing bowl and 20 sec./speed 3.

Form hollows

Using the bottom of a drinking glass, press a hollow in the middle of each ball and press firmly with your fingers (dip the bottom of the drinking glass in flour beforehand).

Fill and let rest

Fill the hollows with the filling and let rest covered for another 15 minutes.

Preheat oven

Preheat oven to 200°C top/bottom heat.

Baking

Whisk egg yolk and milk, brush the dough and bake for about 20 minutes.
