Description

This Scottish Fruit Cake, also known as Dundee Cake, is a delightful treat perfect for the festive season or a special occasion. I've been making this cake for years, and it's always a hit! The combination of raisins, currants, candied citrus peel, and cherries creates a rich and fruity flavor that's simply irresistible. The ground almonds add a lovely nutty note, and the whole almonds on top give it a beautiful finish. It takes a little time to bake, but the result is well worth the effort. Enjoy a slice with a cup of tea or coffee!

Ingredients (13 ingredients)

  • 1 cup raisins
  • 1 cup dried currants
  • 0.33333333333333 cup diced candied citrus peel
  • 0.33333333333333 cup candied cherries, quartered
  • 2 tablespoons grated orange zest
  • 2 cups all-purpose flour, divided
  • 1 cup butter, softened
  • 1 cup white sugar
  • 4 large eggs
  • 1 ounce ground almonds
  • 1 teaspoon baking powder
  • 0.5 cup whole almonds
  • 1 tablespoon corn syrup

Prepare the pan and preheat the oven

Preheat the oven to 325 degrees F (165 degrees C). Line an 8x3-inch round pan with aluminum foil. No Thermomix settings are needed for this step.

Combine and dredge the dried fruits

Combine 1 cup raisins, 1 cup dried currants, ⅓ cup diced candied citrus peel, ⅓ cup candied cherries, quartered, and 2 tablespoons grated orange zest in a bowl. Add 1/3 cup all-purpose flour and mix well to coat the fruits. No Thermomix settings are needed for this step.

Cream butter and sugar

Combine wet and dry ingredients

Pour batter into pan

Bake the cake

Bake in the preheated oven until a wooden pick inserted into the center of the cake comes out clean, about 1 1/2 hours. Remove cake from pan. No Thermomix settings are needed for this step.

Toast almonds

Turn the oven up to 350 degrees F (175 degrees C). Toast ½ cup whole almonds in the preheated oven until lightly browned, about 5 minutes. No Thermomix settings are needed for this step.

Heat corn syrup

Add 1 tablespoon corn syrup to the Thermomix bowl and heat for 1 Min./50°C/Stufe 1.

Glaze and decorate

Brush the heated corn syrup over the top surface of the hot cake. Place the toasted almonds in whatever design you like. After cooling, the cake will not be sticky. No Thermomix settings are needed for this step.
