Description

This lentil salad with cranberries and arugula, prepared in the Thermomix®, is a vegan and gluten-free dish. Red lentils, cranberries and arugula form the basis for this salad. Preparation takes about 55 minutes and yields 4 servings. Ideal as a light main course, appetizer or for a picnic. Suitable for a healthy diet.

  • 2 Stück Onions
  • 2 Zehen Garlic
  • 2 EL Olive oil
  • 500 g red lentils
  • 125 g dried Cranberries
  • 1 EL Sugar
  • 600 ml Vegetable broth
  • 100 ml Aceto Balsamico
  • nach Geschmack Salt
  • nach Geschmack Pepper
  • 0.5 TL Cumin
  • 2 Stück Romaine lettuces
  • 100 g Arugula
  • 250 g Cherry tomatoes
  • 1 Bund Parsley

Chop Onions and Garlic

Place 2 onions in the mixing bowl and chop for 3 sec./speed 5. Push down with the spatula.

Sauté Onions

Add 2 tbsp olive oil to the onions in the mixing bowl and sauté for 3 min./120°C/speed 1.

Chop Garlic

Add 2 cloves of garlic and chop for 3 sec./speed 7. Push down with the spatula.

Add Lentils and Cranberries

Add 500 g red lentils and 125 g dried cranberries to the mixing bowl and sauté for 2 min./100°C/speed 1.

Caramelize Sugar

Add 1 tbsp sugar and caramelize for 1 min./120°C/speed 1.

Add Vegetable Broth and Cook

Add 600 ml vegetable stock to the mixing bowl and cook for 15 min./100°C/speed 1. Activate the reverse to avoid overcooking the lentils.

Season and add Balsamic Vinegar

Add 100 ml Aceto Balsamico, 1/2 tsp cumin, salt and pepper to taste to the mixing bowl and stir for 1 min./speed 2/reverse.

Prepare Salad

Cut 2 romaine lettuces into strips, halve 250 g cherry tomatoes and chop 1 bunch of parsley finely. Place all ingredients in a large bowl.

Mix Salad

Add the lentil mixture from the mixing bowl to the salad ingredients in the bowl and carefully mix with 100 g arugula.
