Description

This artichoke stew with cod and potatoes is a traditional dish that reminds me of my childhood. The combination of the mild flavor of the cod with the artichoke and potato, all cooked slowly, is simply delicious. It is a perfect dish for cold winter days, comforting and full of flavor. The artichoke gives it a special touch and the potato makes it more substantial. Go ahead and prepare it, you will love it! Ingredients (14 ingredients)

  • 6 piece Artichoke
  • 400 g Salted or fresh cod, cleaned
  • 1 piece Onion
  • 2 clove Garlic
  • 1 piece Italian green pepper or small red pepper
  • 15 ml Pulp of choricero pepper or ñora pepper
  • 2 piece Beautiful potato
  • 120 ml White wine
  • 500 ml Fish stock or fumet or water
  • 1 pinch Sweet paprika
  • 1 bunch Fresh parsley
  • 1 piece Extra virgin olive oil
  • 1 pinch Ground black pepper
  • 1 pinch Salt

Chop onion, garlic and pepper

Add the onion, garlic and pepper (without seeds) to the Thermomix bowl. Program 3 seconds at speed 5 to chop finely. If frozen vegetables are used, this step can be omitted.

Sauté the vegetables

Add a good splash of extra virgin olive oil to the bowl. Program 8 minutes, temperature 120°C and speed 1. Add a pinch of salt.

Add choricero pepper pulp and paprika

Meanwhile, prepare the artichokes by peeling them and leaving them in water with lemon and parsley. Wash, peel and cut the potatoes into irregular pieces. Clean the cod of possible bones and skin.
