Description

This red cabbage salad is a true classic and reminiscent of earlier times. The finely grated red cabbage becomes particularly tender and juicy through kneading. The acidity of the herb vinegar and lemon juice harmonizes wonderfully with the light sweetness. A must for every buffet or as a side dish to hearty dishes. It tastes best when it has been infused in the refrigerator for a few hours. This is how the aromas unfold optimally. A simple, but incredibly delicious recipe that always succeeds!

Ingredients (6 ingredients)

  • 1 piece Red cabbage
  • 1 Schuss Herb vinegar
  • 1 piece Lemon(s)
  • to taste Salt
  • to taste Pepper
  • to taste Sugar

Preparation (4 steps)

Prepare red cabbage

Thermomix® Setting
5 sec/Speed 5

Quarter the red cabbage and place in the mixing bowl. Chop for 5 sec./level 5. If necessary, push down with the spatula and repeat the process until the red cabbage has the desired consistency.

Knead red cabbage

Put the chopped red cabbage with 1 tsp of salt in a bowl and knead vigorously for at least 5 minutes until it becomes soft.

Prepare dressing and mix

Thermomix® Setting
10 sec/Speed 3 Linkslauf Reverse

Put the kneaded red cabbage back into the mixing bowl. Add a dash of herb vinegar, the juice of a lemon, salt, pepper and sugar or sweetener to taste. Mix for 10 sec./level 3 reverse.

Let the salad infuse

Transfer the red cabbage salad to a bowl and leave to infuse in the refrigerator for at least 5 hours, or better overnight. Taste again before serving and season again if necessary.
