Description

This rustic apple and cranberry tart is the perfect dessert to celebrate the flavors of autumn. The combination of tart cranberries and sweet apples, spiced with cinnamon and nutmeg, creates a warm and comforting filling. The buttery crust, made easily in the Thermomix®, adds a delightful crunch. I love making this tart for Thanksgiving or any fall gathering. It's a crowd-pleaser that's sure to impress! Feel free to adjust the amount of sugar to your liking. A scoop of vanilla ice cream on top is the perfect finishing touch.

Ingredients (14 ingredients)

  • 2 cups all-purpose flour
  • 0.5 cup butter, chilled
  • 0.5 cup cream cheese
  • 1 tablespoon water
  • 4 piece apples - peeled, cored, and thinly sliced
  • 0.66666666666667 cup fresh cranberries
  • 0.25 cup brown sugar
  • 0.25 cup white sugar
  • 2 tablespoons all-purpose flour
  • 0.75 teaspoon ground cinnamon
  • 0.125 teaspoon ground nutmeg
  • 0.33333333333333 cup roughly chopped walnuts
  • 1 piece egg, beaten
  • 1 tablespoon raw sugar

Preparation (6 steps)

Prepare the Dough

Thermomix® Setting
20 sec/Speed 4

Place 2 cups of all-purpose flour, ½ cup of chilled butter (cut into cubes), and ½ cup of cream cheese (cut into cubes) into the Thermomix bowl. Mix for 20 Sec./Stufe 4 until the mixture resembles coarse crumbs. Add 1 tablespoon of water and mix for 10 Sec./Stufe 3 until the dough forms a ball. If needed, add a little more water, one teaspoon at a time.

Shape the Dough

Remove the dough from the Thermomix bowl, wrap it in plastic wrap, and refrigerate for at least 30 minutes. This will make it easier to roll out.

Prepare the Fruit Filling

In a large bowl, combine 4 peeled, cored, and thinly sliced apples, ⅔ cup of fresh cranberries, ¼ cup of brown sugar, ¼ cup of white sugar, 2 tablespoons of all-purpose flour, ¾ teaspoon of ground cinnamon, and ⅛ teaspoon of ground nutmeg. Mix well until the fruit is coated.

Assemble the Tart

Preheat oven to 375 degrees F (190 degrees C). Lightly grease a baking sheet. Roll the chilled dough onto a lightly floured work surface, forming about an 11-inch circle. Transfer the dough to the prepared baking sheet. Arrange the apple-cranberry mixture decoratively on the dough, leaving a 2-inch rim of exposed dough. Sprinkle ⅓ cup of roughly chopped walnuts over the apple-cranberry mixture. Fold the exposed crust up and over the edge of the fruit.

Add Egg Wash and Sugar

Brush 1 beaten egg over the crust and around the edge of the tart. Sprinkle with 1 tablespoon of raw sugar.

Bake the Tart

Bake in the preheated oven until the crust is browned and the filling is tender, 30 to 35 minutes.
