This traditional dish, which I have adapted for the Thermomix®, is a true delight. The fish, steamed with cassava, potatoes and plantain, acquires a unique flavor and a soft texture that will transport you to the kitchen of yesteryear. It is a hearty dish, perfect for a lunch or dinner with the family. The combination of the earthy flavors of cassava and potato, the sweetness of plantain and the freshness of the fish is simply irresistible. In addition, it is a healthy and nutritious option. Ingredients (7 ingredients)

  • 1 piece Whole fish (gilt-head bream or sea bass), scaled and cleaned
  • 2 libras Cassava peeled and split
  • 2 libras Potatoes peeled and split
  • 2 piece Green cooking plantains peeled and split
  • Salt
  • Hogao
  • 1500 ml Water

Peel and split the cassava, potatoes and plantains into medium pieces. Reserve.

Thermomix® Setting
30 min/Varoma/Speed 1 Varoma

Place 1000 ml of water in the Thermomix bowl. Introduce the cassava, potatoes and plantain into the basket. Place the basket inside the bowl and program 30 min/Varoma/Stufe 1.

Fish preparation

While the vegetables are cooking, season the fish with salt and pepper to taste.

Steaming the fish

Thermomix® Setting
15 min/Varoma/Speed 1 Varoma

Once the cooking time of the vegetables is finished, carefully remove the basket. Place the fish in the Varoma container. Pour 500 ml of clean water into the bowl. Place the Varoma on the bowl and program 15 min/Varoma/Stufe 1.

Serve

Carefully remove the Varoma and the basket. Serve the fish with the cassava, potatoes and plantain. Accompany with hogao to taste.
