Description

This seafood stew mariner style, also known as Fish Chupín, is a comforting and flavorful dish, perfect for cold days. The combination of white fish, potatoes and vegetables in an aromatic broth makes it a complete and nutritious meal. I have been preparing it for years and it is always a success at home. The touch of white wine and sweet paprika enhances the flavors of the sea and the land. It is ideal for a family meal or a special dinner. In addition, it is a recipe that can be easily adapted to everyone's tastes, using different types of fish or adding other vegetables. Go ahead and try it, you will love it!

Ingredients (16 ingredients)

  • 1 kilogramo fish
  • 1 piece onion
  • 1 piece tomato
  • 1 piece pepper
  • 3 piece medium potatoes
  • 1 chorro white wine
  • 3 dientes garlic
  • 1 piece lemon (the juice)
  • 1 container crushed tomato
  • 2 cucharadas de postre salt
  • 1 pinch ground black pepper
  • 4 cucharadas soperas extra virgin olive oil
  • 100 mililitros fish stock
  • 1 vaso pequeño water
  • 1 cucharada postre sweet paprika
  • 1 pinch chopped parsley

Preparation (12 steps)

Marinate the fish

Clean the fish, removing bones, tail and head. Cut the fish into medium pieces. In a bowl, add the juice of 1 lemon, 2 dessert spoons of salt and 1 pinch of ground black pepper. Stir well to integrate the flavors and marinate in the refrigerator for 45 minutes.

Prepare the vegetables

Cut 1 onion into rings, 1 pepper into julienne strips and chop 3 cloves of garlic very finely. Cut 3 medium potatoes into slices about 2 centimeters thick.

Sauté the onion and pepper

Add 4 tablespoons of extra virgin olive oil to the Thermomix bowl. Add the onion in rings and the pepper in julienne strips. Sauté for 3 minutes at 120°C on speed 1.

Add the garlic

Add the chopped garlic to the Thermomix bowl and sauté for 4 minutes at 120°C on speed 1.

Incorporate the white wine

Add 1 splash of white wine to the Thermomix bowl and program 1 minute at Varoma, speed 1, without the measuring cup, so that the alcohol evaporates.

Add the tomato

Clean and cut 1 tomato into cubes. Add the tomato to the Thermomix bowl and cook for 2 minutes at 120°C on speed 1.

Incorporate the crushed tomato

Add 1 glass of crushed tomato to the Thermomix bowl and cook for 3 minutes at 120°C on speed 1.

Add the stock and the water

Add 100 milliliters of fish stock and 1 small glass of water to the Thermomix bowl. Program 5 minutes at 100°C on speed 1.

Cook the potatoes

Thermomix® Setting

Add the potatoes in slices to the Thermomix bowl. Program 10 minutes at 100°C on speed 1.

Add the paprika

Add 1 dessert spoon of sweet paprika to the Thermomix bowl and stir with the spatula. Taste and correct salt if necessary.

Cook the fish

10 min/194°F/Speed 1 90 Reverse

Drain the marinated fish. Cut the fish into fillets 4 fingers wide, approximately, and add the pieces to the Thermomix bowl. Program 10 minutes at 90°C on speed 1 with the reverse direction.

Serve

Sprinkle 1 pinch of chopped parsley on top. Let the dish rest for half an hour before serving.
