Description

This Hokkaido quiche from the Thermomix® is a vegetarian main course with pumpkin, onions and garlic. The dough is prepared with flour, butter and egg. The preparation time is 75 minutes, of which 30 minutes are active working time. The recipe yields 6 servings and is ideal for an autumnal family meal.

Ingredients (14 ingredients)

  • 250 g Flour
  • 1 TL Salt
  • 150 g Butter
  • 1 Stück Egg (size M)
  • 1 Stück red Onion (large)
  • 2 Zehen Garlic
  • 900 g Hokkaido pumpkin
  • 2 EL Olive oil
  • 200 g Cream
  • 4 Stück Eggs
  • 100 g Grated cheese
  • 1 Prise Pepper
  • 1 Prise Nutmeg
  • 100 g Feta

Preparation (6 steps)

Prepare shortcrust pastry

Thermomix® Setting
5 sec/Speed 4, 2 min/Kneading speed

Put 250 g flour and 1 teaspoon salt into the mixing bowl and mix for 5 sec./speed 4. Add 150 g cold, diced butter and 1 egg and knead for 2 min./kneading stage to form a dough. Shape the dough into a ball, wrap in cling film and leave to rest in the refrigerator for 30 minutes.

Chop onions and garlic

Halve 1 large red onion and place in the mixing bowl. Chop for 3 sec./speed 5. Add 2 cloves of garlic and chop for 3 sec./speed 7.

Prepare pumpkin

Cut 900 g Hokkaido pumpkin into bite-sized pieces.

Sauté pumpkin, onions and garlic

3 min/248°F/Speed 1, 5 min/248°F/Linkslauf/Gentle stir speed 248°F, 248°F Reverse

Put 2 tablespoons of olive oil in the mixing bowl. Add onions and garlic and sauté for 3 min./120°C/speed 1. Add pumpkin pieces and sauté for 5 min./120°C/reverse/gentle stir setting.

Prepare filling

Put 200 g cream, 4 eggs and 100 g grated cheese in the mixing bowl and stir for 10 sec./speed 4. Add the sautéed pumpkin, onions and garlic and season with salt, pepper and nutmeg. Mix for 10 sec./reverse/gentle stir setting.

Bake quiche

Preheat the oven to 180°C top/bottom heat. Grease a quiche dish (Ø 28 cm). Roll out the dough and place in the dish. Prick with a fork. Optionally cover with baking paper and weigh down with dried pulses. Pre-bake for 10 minutes. Pour the cream-pumpkin mixture onto the dough base and top with 100 g feta. Bake for 30 minutes.
