Description

  • 250 g Button mushrooms
  • 3 EL Olive oil
  • nach Geschmack Salt
  • nach Geschmack Pepper
  • 4 Scheiben Farmhouse bread
  • 5 EL White wine vinegar
  • 4 Stück Eggs (size M)
  • 80 g Lamb's lettuce
  • 4 Stiele Parsley
  • 4 TL Cream cheese

Preparation (8 steps)

Prepare mushrooms

Clean 250 g button mushrooms and cut into slices. Set aside the sliced mushrooms.

Fry mushrooms

Thermomix® Setting
4 min/Varoma/Linkslauf Speed 1 Varoma Reverse

Add 1 tbsp olive oil to the mixing bowl and heat for 3 min/Varoma/speed 1. Add the sliced mushrooms and fry for another 4 min/Varoma/Reverse speed 1. Season with salt and pepper. Remove the mushrooms from the mixing bowl and set aside.

Toast bread

Thermomix® Setting
2 min/Varoma/Linkslauf Speed 1 Varoma Reverse

Add 2 tbsp olive oil to the mixing bowl and heat for 2 min/Varoma/speed 1. Add the 4 large slices of farmhouse bread to the mixing bowl in portions and toast for 2 min/Varoma/Reverse speed 1 on both sides. Remove the toasted bread from the mixing bowl and set aside.

Prepare water

Thermomix® Setting
10 min/212°F/Speed 1 100

Add 1 l water, 5 tbsp white wine vinegar and some salt to the mixing bowl and bring to the boil for 10 min/100°C/speed 1.

Poach eggs

Thermomix® Setting
4 min/176°F/Linkslauf Speed 1 80 Reverse

Reduce the temperature to 80°C. Crack the 4 eggs (size M) one after the other into a soup ladle and carefully slide them into the vinegar water in the mixing bowl. Cook for 4 min/80°C/Reverse speed 1.

Prepare lamb's lettuce and parsley

Thermomix® Setting
3 sec/Speed 5

Wash 80 g lamb's lettuce and 4 sprigs of parsley. Pluck the parsley leaves and put them in the mixing bowl. Chop for 3 sec/speed 5. Remove the chopped parsley from the mixing bowl and set aside.

Top bread

Spread the bread slices with 1 tsp cream cheese each. Top with lamb's lettuce and the fried mushrooms.

Arrange eggs

Carefully lift the poached eggs out of the mixing bowl, drain and arrange on the topped bread. Sprinkle with the chopped parsley and serve.
