Description

This Philippine-style caramel pudding, prepared in the Thermomix®, is a creamy dessert with condensed milk, cream and eggs. The preparation includes a caramel layer and subsequent steaming. In about 75 minutes, a dessert for 6 servings is created. Ideal as a festive dessert or for lovers of sweet, cold dishes.

Ingredients (7 ingredients)

  • 100 g Sugar
  • 0.5 TL Vanilla bean
  • 340 g Condensed milk (unsweetened)
  • 430 g Condensed milk (sweetened)
  • 200 g Whipping cream
  • 6 Stück Egg yolks (size M)
  • 2 Stück Eggs (size M)

Preparation (9 steps)

Prepare caramel

Slowly heat 100 g sugar and 3 tbsp water in a saucepan over low to medium heat until the sugar has melted and is golden yellow. Distribute the caramel evenly on dessert bowls (only so little that the bottom is just covered).

Prepare oven

Fill a roasting pan about halfway with water and place in the oven. Preheat the oven to 150 °C top and bottom heat.

Prepare vanilla

Cut 0.5 vanilla bean lengthwise and scrape out the pulp with a small spoon.

Heat condensed milk and cream

Thermomix® Setting
5 min/194°F/Speed 2 90

Place 340 g unsweetened condensed milk, 430 g sweetened condensed milk, 200 g whipping cream and vanilla pulp into the mixing bowl and heat for 5 min./90°C/speed 2.

Whisk eggs

Whisk 6 egg yolks (size M) and 2 eggs (size M) in a separate bowl.

Add eggs and stir

Thermomix® Setting
1 min/158°F/Speed 2 70

Reduce the temperature in the mixing bowl to 70°C. Slowly add the whisked eggs to the mixing bowl and stir for 1 min./70°C/speed 2. The mixture should thicken slightly.

Fill liquid into molds

Carefully pour the liquid into the dessert bowls covered with caramel.

Bake in a water bath

Place the dessert bowls in the roasting pan filled with water (make sure that no water runs into the dessert bowls). Let the Leche Flan set in the preheated oven for about 35-45 minutes. The mass is still slightly "wobbly" before cooling.

Cool and serve

Let the Leche Flan cool first at room temperature, then in the refrigerator. Carefully loosen from the mold with a knife and serve.
