These fried plantain slices, known as Patacones in Colombia, are a delightful and simple treat. I've been making these for years, and they're always a hit! The plantains are fried twice, resulting in a crispy exterior and a soft, slightly sweet interior. Perfect as a side dish or a snack, they're incredibly versatile. A pinch of salt enhances the natural sweetness of the plantains. This recipe is naturally gluten-free and vegetarian, making it a great option for various dietary needs. Ingredients (3 ingredients)

  • 0.5 cup oil for frying
  • 1 piece ripe plantain, peeled and cut into 1-inch rounds
  • 1 pinch salt

Preparation (5 steps)

Prepare Plantain

Peel the plantain and cut it into 1-inch thick rounds. Set aside.

First Fry

Pour ½ cup oil into a large skillet. Heat the oil over medium heat. Carefully lower the plantain slices into the hot oil. Fry until slightly browned, about 2 to 3 minutes per side. Transfer the plantain slices to a plate using a slotted spoon, reserving the oil in the skillet.

Smash Plantains

Place a second plate, right-side up, onto the plantains. Smash the plantain slices by gently pressing the top plate into the bottom plate.

Second Fry

Carefully lower the smashed plantains into the hot oil. Fry until browned, about 2 to 3 minutes per side. Transfer to a paper towel-lined plate to drain.

Season and Serve

Sprinkle the fried plantain slices with 1 pinch of salt. Serve immediately and enjoy!
