Description

This recipe for rustic pizza with speck and mushrooms is an absolute delight! I have been making this pizza for some time now and it is always a hit. The dough is easy to make and the combination of speck, brie and mushrooms is simply delicious. Although it takes a little longer to prepare, it is definitely worth it. Perfect for a cozy evening with friends or family. The pizza is rich and filling, ideal for those who love savory flavors. A touch of garlic and fresh parsley completes the taste experience. Try it out, you will be thrilled!

Ingredients (12 ingredients)

  • Pizza flour
  • Water
  • Brewer's yeast
  • Fine salt
  • Speck
  • Brie
  • Mozzarella
  • Champignon mushrooms
  • 1 clove Garlic
  • Parsley
  • Fine salt
  • Extra virgin olive oil (EVO)

Preparation (6 steps)

Prepare yeast dough

Thermomix® Setting
20 sec/Speed 3, 20 sec/Speed 4, 2 min/Kneading speed

Add water and crumbled yeast to the mixing bowl and mix for 20 sec/speed 3. Add half of the flour and mix for 20 sec/speed 4. Add salt and the remaining flour and knead for 2 min/kneading stage to form a smooth dough.

Let the dough rise

Place the dough in a lightly floured bowl, cover with a cloth and let rise in a warm place for about 2 hours, until doubled in volume.

Shape the dough

Divide the dough into two equal parts on a floured work surface. Place each half in a round form (approx. 30 cm diameter) greased with olive oil and gently spread with your fingers from the center to the edge. If the dough recoils too much, let it rest for 5 minutes and then continue. For a thicker pizza, let the dough rise again for 1 hour.

Prepare mushrooms

Thermomix® Setting
3 sec/Speed 7, 3 min/248°F/Speed 1, 10 min/212°F/Speed 1 120

Clean and slice the champignon mushrooms. Place garlic in the mixing bowl and chop for 3 sec/speed 7. Add olive oil and sauté for 3 min/120°C/speed 1. Add mushrooms and parsley, season with salt and cook for 10 min/100°C/speed 1.

Top and bake pizza

Drizzle the pizza dough with olive oil and bake in a preheated oven at 230°C for about 25 minutes. Remove pizza from the oven and top with the mushrooms.

Finish pizza

Slice mozzarella and spread on the pizza. Place the pizza back in the oven and bake for about 5 minutes, until the mozzarella is melted. Cut brie into pieces and spread on the pizza together with the speck. Serve hot.
