Description

This braised veal roast with a lemon-herb note, prepared in the Thermomix®, is a hearty main course with Mediterranean flavors. The main ingredients are veal roast, onions, carrots, celery, and white wine. The preparation time is about 100 minutes for 6 servings. Ideal as a festive family meal or for the winter season.

  • 1000 g Veal roast
  • nach Geschmack Salt
  • nach Geschmack Pepper
  • 1 EL Clarified butter
  • 1 Stück Onion
  • 1 Stück Carrot
  • 1 Stange Celery
  • 150 ml White wine
  • 350 ml Veal stock
  • 1 Blatt Bay leaf
  • 2 Zehe Garlic
  • 1 Bund Flat-leaf parsley
  • 1 Stück Organic lemon

Preparation (10 steps)

Prepare the vegetables

Wash, peel and coarsely dice the onion, carrot, and celery. Peel the garlic cloves and set aside. Wash the parsley, shake dry, and roughly chop. Wash the lemon in hot water and grate the zest.

Chop the vegetables

Place the onion, carrot, and celery in the mixing bowl and chop for 5 sec/speed 5. If necessary, use the spatula to scrape down the sides.

Sauté the vegetables

Add the clarified butter to the chopped vegetables in the mixing bowl and sauté for 3 min/120°C/speed 1.

Deglaze with wine and reduce

Thermomix® Setting

Add the white wine to the mixing bowl and let it reduce without the measuring cup for 5 min/Varoma/speed 1.

Add stock and bay leaf

Add the veal stock and bay leaf to the mixing bowl. Season the veal roast with salt and pepper. Place the veal roast in a roasting pan and pour the vegetables from the mixing bowl over it. Cover the roasting pan.

Braising in the oven

Braise the covered roasting pan with the veal roast and vegetable sauce in the preheated oven at 180°C top/bottom heat for 60 minutes.

Chop the garlic

Place the garlic cloves in the mixing bowl and chop for 3 sec/speed 7. If necessary, use the spatula to scrape down the sides.

Prepare gremolata

5 sec/Speed 3 Reverse

Add the chopped parsley and lemon zest to the chopped garlic in the mixing bowl and mix for 5 sec/speed 3/Reverse.

Purée the sauce

30 sec/Speed 10

Remove the veal roast from the roasting pan and keep warm. Pour the vegetable sauce from the roasting pan into the mixing bowl and purée for 30 sec/speed 10.

Strain and season the sauce

Thermomix® Setting
5 sec/Speed 3

Pass the puréed sauce through a sieve. Season with salt and pepper and, if necessary, mix again for 5 sec/speed 3.
