Description

This simple vegetable frittata from the Thermomix® is a quick, vegetarian main course with eggs, cherry tomatoes, mushrooms and bell peppers. The bake is prepared in just 25 minutes and makes one serving. Ideal for light meals or as a quick lunch. Refined with fresh herbs and Parmesan cheese. Perfect for anyone looking for an uncomplicated meal.

Ingredients (11 ingredients)

  • 6 Stück Eggs, size M
  • 150 g Cherry tomatoes
  • 100 g Mushrooms
  • 50 g Parmesan
  • 1 Stück red bell pepper
  • 1 Stück red onion
  • 1 Zehe Garlic
  • 3 Zweige fresh herbs (e.g. basil, oregano)
  • 2 EL Olive oil
  • 1 TL Salt
  • 0.25 TL black pepper, freshly ground

Preparation (6 steps)

Prepare

Peel 1 clove of garlic and 1 red onion. Halve the onion and place in the mixing bowl, chop for 3 sec./speed 5. Transfer. Place garlic in the mixing bowl and chop for 3 sec./speed 7. Transfer. Clean 1 red bell pepper (approx. 180 g) and 100 g mushrooms and cut into fine strips or slices. Wash 150 g cherry tomatoes, pat dry and halve. Grate 50 g Parmesan. Wash 3 sprigs of fresh herbs (e.g. basil, oregano), shake dry, pluck the leaves and chop.

Sauté onions

Add 2 tbsp olive oil to the mixing bowl. Add the chopped onions and sauté for 3 min./120°C/speed 1.

Sauté vegetables

Add bell pepper strips and mushroom slices and sauté for 3 min./120°C/speed 1.

Add tomatoes and garlic

Add chopped garlic and halved cherry tomatoes and stir in for 1 min./120°C/Reverse/Soft Stir.

Prepare eggs

Transfer the vegetables to an ovenproof dish. Rinse the mixing bowl. Add 6 eggs, 1 tsp salt, ¼ tsp black pepper, grated Parmesan and chopped herbs to the mixing bowl and mix for 10 sec./speed 4.

Bake frittata

Pour the egg mixture over the vegetables in the ovenproof dish. Bake in a preheated oven at 180°C for approx. 15-20 minutes until the frittata is set.
