Description

This Thermomix® recipe for cod fillet with herb-Parmesan crust is a protein-rich main course with fish, Parmesan, and herb butter. Preparation in the Thermomix® takes about 35 minutes and yields 4 servings. Ideal for a hearty, Mediterranean meal and suitable as a warm oven dish. Ingredients (7 ingredients)

  • 600 g Cod fillet or other fresh fish fillet (thaw frozen fish fillet gently in the refrigerator beforehand)
  • 100 g Herb butter (very soft)
  • 40 g Parmesan (freshly grated)
  • 25 g Breadcrumbs (or Panko breadcrumbs)
  • 0.5 Lemon, juice of + 2-3 squirts of lemon
  • Sea salt
  • Freshly ground black pepper

Preparation (6 steps)

Preheat Oven

Preheat the oven to 220°C top/bottom heat (or 200°C convection). This step is done without the Thermomix.

Prepare Fish

Rinse the fish fillet briefly and pat dry with paper towels. Season with sea salt and freshly ground black pepper, and drizzle with 2-3 squirts of lemon juice. This step is done without the Thermomix.

Chop Parmesan

Place 40 g Parmesan in pieces in the mixing bowl and chop for 10 sec/speed 8. Transfer.

Prepare Herb Butter Mixture

20 sec/Speed 3, 10 sec/Speed 3

Place 100 g very soft herb butter, juice of half a lemon, the chopped Parmesan and 25 g breadcrumbs in the mixing bowl. Mix for 20 sec/speed 3. Scrape down the sides with the spatula and mix for another 10 sec/speed 3.

Cover Fish

Grease a baking dish or line a baking sheet with parchment paper. Place the prepared fish in it and spread with the herb butter mixture until it is used up. This step is done without the Thermomix.

Cook Fish

Cook or grill the fish in the preheated oven on the second rack from the bottom for about 20 to 25 minutes. This step is done without the Thermomix.
