Description

This Thermomix® recipe for Wareniki with curd cheese is a hearty and vegetarian main course from the dumplings category. The dumplings are mainly prepared from flour, milk, egg and curd cheese. With a preparation time of 70 minutes, you get about 40 servings. Ideal as an inexpensive family meal or for lovers of Russian cuisine.

  • 1 Stück Egg
  • 220 g Milk
  • 450 g Flour
  • 1 TL Salt
  • 30 g Oil
  • 600 g Granular cream cheese
  • 2 Stück Egg yolk
  • 70 g Sugar

Preparation (12 steps)

Prepare curd cheese

Place granular cream cheese in a sieve and refrigerate overnight to allow excess liquid to drain.

Prepare dough

Add 1 egg, 220 g milk, 450 g flour, 1 tsp salt and 30 g oil to the mixing bowl and mix for 3 min./kneading stage.

Let dough rest

Place the finished dough in a lightly floured bowl and let it rest, covered, for 30 minutes.

Prepare filling

Put 2 egg yolks in the mixing bowl and mix for 10 sec./speed 5.

Mix filling

Add 600 g granular cream cheese and 70 g sugar and mix for 1 min./reverse/speed 3 - transfer to a bowl.

Shape wareniki

Roll out the dough 2mm thick on a floured work surface and cut out circles with a glass (4cm diameter).

Fill wareniki

Place a heaped teaspoon of filling on each circle.

Seal wareniki

Press the edge of the dough firmly together to create a crescent shape.

Process dough scraps

Knead the leftover dough well, roll out again, cut out, fill and press firmly together.

Prepare wareniki

Place the finished wareniki on baking paper until ready to cook.

Cook wareniki

Bring water to a boil and salt it. Cook wareniki until they float to the surface, let simmer for about 2-3 minutes.

Serve wareniki

Place the finished wareniki in a bowl and stir in butter.
