Description

This hearty beef roast with red wine sauce, prepared in the Thermomix®, is a savory main course with braised beef, red wine and root vegetables. Preparation takes about 90 minutes and yields 4 servings. Ideal for a family dinner or as a warming meal on cold days. The Thermomix® simplifies the braising process and the preparation of the aromatic sauce.

Ingredients (16 ingredients)

  • 1.5 kg Beef roast
  • 800 ml Beef broth
  • 400 ml Red wine, dry
  • 200 g Shallots
  • 200 g Carrots
  • 200 g Celeriac
  • 200 g Leek
  • 2 Stück Bay leaves
  • 2 EL Cornstarch
  • 1 EL Tomato paste
  • 1 EL Sugar
  • 1 EL Clarified butter
  • Salt
  • Black pepper, freshly ground
  • Mustard, medium-hot
  • Parsley, fresh

Prepare

Preheat the oven to 160 °C top / bottom heat. Remove skin and tendons from 1.5 kg of beef roast, pat dry and salt. Peel and halve 200 g shallots. Peel 200 g carrots and cut into thick slices. Peel 200 g celeriac and cut into thick cubes. Wash, clean and cut 200 g leek into thick strips.

Sear the beef

Heat 1 tbsp clarified butter in a pan and sear the roast on all sides. Remove and pepper.

Sauté the vegetables

Place shallots, carrots, celeriac and leek in the mixing bowl and chop for 5 sec/speed 5. Add 1 tbsp clarified butter and sauté for 5 min/120°C/speed 1.

Prepare the sauce

10 min/Varoma/Speed 1 Varoma

Add 1 tbsp tomato paste and 1 tbsp sugar and stir in for 1 min/120°C/speed 1. Deglaze with 400 ml red wine and reduce for 10 min/Varoma/speed 1 without the measuring cup. Add 800 ml beef broth and 2 bay leaves.

Braising in the oven

90 min/320°F/Ober-/Unterhitze 320°F

Place the roast in the Varoma container and braise in the preheated oven at 160 °C top / bottom heat for 90 min. Turn the roast halfway through the cooking time.

Finish the sauce

2 min/212°F/Speed 3 212°F

Wrap the roast in aluminum foil and let it rest. Pour the sauce through a sieve into the mixing bowl, remove bay leaves. Bring the sauce to a boil (5 min/100°C/speed 1). Mix 2 tbsp cornstarch with 2 tbsp water and add to the sauce while stirring (speed 3). Simmer for 2 min/100°C/speed 3. Season with salt, pepper and mustard.

Serve

Wash, dry and chop the parsley. Slice the roast and serve with sauce and parsley.
