Description

These chicken and zucchini skewers are a delicious and light alternative to classic meatballs. Perfect for a summer lunch or an aperitif with friends, they are easy to prepare and are also very popular with children. The chicken meat, lean and rich in protein, goes perfectly with the sweetness of the zucchini, creating a truly irresistible balance of flavors. I often prepare them when I have guests for dinner, accompanying them with a fresh green salad and a homemade yogurt sauce. A simple and tasty idea to bring a touch of originality to the table!

Ingredients (9 ingredients)

  • 600 g ground chicken
  • 500 g zucchini
  • 2 uova eggs
  • 3 cucchiai grated cheese
  • 4 cucchiai breadcrumbs
  • mint
  • extra virgin olive oil
  • fine salt
  • breadcrumbs for breading

Preparation (9 steps)

Grate zucchini

Thermomix® Setting

Put 500 g of topped zucchini in the bowl and grate for 5 Sec./Stufe 5. Transfer the grated zucchini to a bowl, add a pinch of fine salt, mix and let it rest for 10 minutes.

Squeeze zucchini

Squeeze the zucchini well with your hands or with a clean cloth to remove the vegetation water.

Meatball mixture

Put the squeezed zucchini in another spacious bowl and add 600 g of ground chicken, giving it a first mix.

Eggs and aromas

Add 2 eggs, fine salt to taste, 3 tablespoons of grated cheese and mint to taste, chopped, and mix well.

Breadcrumbs and rest

Add 4 tablespoons of breadcrumbs and mix everything with a fork. Then let the mixture rest in the refrigerator for 15 minutes.

Form the meatballs

Take a little dough, form a ball and then lengthen it to make small “torpedoes”.

Thread the meatballs

Thread the meatballs with a wooden stick and proceed like this until the dough is finished.

Breading

Pass the meatballs in the breadcrumbs to taste and then place them on a baking sheet covered with baking paper.

Baking in the oven

A drizzle of extra virgin olive oil to taste on each and cook in a static oven preheated to 180 °C for about 30 minutes, turning them halfway through cooking.
