Description

Angel eyes are a classic Christmas cookie that is easy to prepare with the Thermomix®. This cookie recipe contains flour, butter, sugar, egg yolk and coconut flakes. The preparation time is about 120 minutes, of which 45 minutes are active working time. Ideal as a festive finger food, dessert or for baking with the family. The recipe is optimized for use with Wundermix MilkiMizer and Meistermix Patix.

Ingredients (9 ingredients)

  • 150 g Flour
  • 60 g Sugar
  • 1 Prise Salt
  • 50 g Coconut flakes
  • 100 g Butter (should be slightly coarse)
  • 1 Stück Egg yolk
  • 3 EL Icing sugar
  • 1 Päckchen Vanilla sugar
  • 80 g Quince jelly

Preparation (9 steps)

Mix dry ingredients

Add flour, sugar, salt and coconut flakes to the mixing bowl and mix for 10 sec/speed 4.

Prepare dough

Thermomix® Setting

Add soft butter and egg yolk and knead for 2 min/knead setting with the Patix dough knife to form a smooth dough.

Cool dough

Wrap the dough in cling film and let it rest in the refrigerator for one hour.

Shape dough

On a floured work surface, form the dough into a roll (approx. 2 cm diameter) and cut into approx. 1 cm thick slices. Shape the slices into balls and place them on a baking tray lined with baking paper. Keep a distance of 4 to 5 cm.

Form hollows

Press a small hollow into each cookie with the handle of a wooden spoon.

Bake cookies

Bake the cookies in a preheated oven at about 180°C for about 12-15 minutes until golden yellow.

Heat quince jelly

Thermomix® Setting

Add the remaining quince jelly to the mixing bowl and heat for 3 min/50°C/speed 1.

Fill hollows

Remove the cookies from the oven and fill the half-filled hollows with the heated quince jelly. The jelly can protrude slightly over the edge of the cookies.

Decorate cookies

Lightly dust the edge of the cookies with icing sugar.
