Description

This pasta gratin with grilled vegetables is a simple and tasty summer dish. I love using seasonal vegetables like colorful peppers, zucchini and sweet potatoes for maximum flavor. The creamy fresh cheese sauce coats the pasta and vegetables, and the fresh basil adds a touch of freshness. It's a perfect dish for a family dinner or a meal with friends. Easy to prepare and always appreciated, this gratin is a staple of my summer cooking. It can easily be prepared in advance and browned at the last minute. A real delight!

Ingredients (10 ingredients)

  • 250 g penne
  • 150 g cherry tomatoes halved
  • 3 c. à s. semi-skimmed milk
  • Fresh basil
  • 1 cm zucchini halved lengthwise, then sliced ​​about 1 cm
  • 300 g sweet potatoes peeled and cut into large pieces of about 2.5 cm
  • 120 g fresh cheese
  • 1 piece red pepper seeded and cut into pieces
  • 1 piece yellow pepper seeded and cut into pieces
  • 1 c. à s. olive oil

Preparation (7 steps)

Vegetable preparation

Preheat the oven to 220°C. Put the olive oil, the red and yellow peppers cut into pieces, the sweet potato peeled and cut into large pieces of about 2.5 cm, and the zucchini cut into slices of about 1 cm in a large roasting dish and season with freshly ground pepper. Mix well to coat the vegetables with oil.

Cooking the vegetables in the oven

Roast in the oven for 20 minutes. Then add the halved cherry tomatoes and grill for another 5 minutes, until the vegetables are tender and lightly browned.

Cooking the pasta

While the vegetables are cooking, put 1 liter of water in the Thermomix bowl and bring to a boil for 10 Min./100°C/Stufe 1.

Adding pasta and cooking

Add 250 g of penne to the bowl and cook for 10 Min./100°C/Linkslauf Stufe 1, or according to the instructions on the package.

Sauce preparation

Drain the pasta and put it back in the Thermomix bowl. Add 120 g of fresh cheese, 3 tbsp. tablespoons of semi-skimmed milk and mix for 1 Min./60°C/Stufe 2, until the fresh cheese is melted and you obtain a smooth sauce.

Assembly and browning

30 sec/Linkslauf Speed 1 Reverse

Add the grilled vegetables to the bowl and mix gently for 30 Sek./Linkslauf Stufe 1 to incorporate them into the sauce and pasta.

Service

Pour everything into a large hot dish and garnish with chopped fresh basil. Serve immediately.
