Description

This savory frittata with zucchini and tomatoes is an absolute summer dish! I like to make it when I have fresh vegetables from the garden. The preparation is super easy and quick, especially with the Thermomix®. The frittata tastes good warm or cold and is perfect for a light lunch, a brunch or as a side dish for grilling. With fresh chives and creamy mozzarella it becomes a pleasure. A great vegetarian dish that also tastes good to children!

Ingredients (10 ingredients)

  • 1 piece Zucchini
  • 300 g Tomatoes
  • 1 piece Onion
  • 8 piece Eggs
  • 100 ml Milk
  • to taste Salt
  • to taste Pepper
  • 2 tbsp Nutmeg
  • 100 g Mozzarella
  • 0.5 bunch Chives

Preparation (9 steps)

Chop onion

3 sec/Speed 5

Peel, quarter the onion and place in the mixing bowl. Chop 3 sec./level 5.

Sauté onion

Thermomix® Setting
3 min/248°F/Speed 1 120

Add some oil to the onions in the mixing bowl and sauté 3 min./120°C/level 1.

Prepare zucchini and tomatoes

Wash the zucchini, coarsely grate and squeeze well in a clean dish towel. Wash tomatoes, remove the stalk and cut into cubes. Then add to the onions in the mixing bowl.

Sauté vegetables

Sauté zucchini and tomatoes with the onions for 5 min./120°C/level 1.

Prepare egg milk

Thermomix® Setting
20 sec/Speed 3

Add eggs, milk, salt, pepper and nutmeg to the mixing bowl and stir for 20 sec./level 3.

Add egg milk to the vegetables

Thermomix® Setting
5 sec/Speed 2

Add the egg milk to the vegetables in the mixing bowl and stir in for 5 sec./level 2.

Let the frittata set

Pour the mixture into a coated pan and let it set over medium heat for about 10 minutes. Turn and let it set for another 10 minutes.

Melt mozzarella

Cut mozzarella into thin slices. Shortly before the end of the cooking time, spread over the frittata and let it melt a little.

Garnish frittata

Wash chives, shake dry and cut into rolls. Sprinkle over the frittata.
