Description

These Iberian ham croquettes are a classic that never fails. The creamy béchamel, the intense flavor of the ham and the crunchy breading make them an irresistible bite. Perfect for a snack dinner, a party or simply to treat yourself. The recipe is a bit laborious, but the result is worth it. I often prepare them for family parties and they are always a success. Go ahead and try them, you will love them! You can accompany them with a fresh salad for a contrast of flavors.

Ingredients (11 ingredients)

  • 1 piece large chopped onion
  • 250 gms butter
  • 250 gms flour
  • 1 litro milk
  • 350 gr Iberian ham cut into small cubes or small dice
  • 1 a gusto Salt and pepper
  • 1 pinch nutmeg
  • 1 piece egg
  • 1 cup flour
  • 1 cup breadcrumbs
  • 1 cantidad necesaria mild olive oil for frying the croquettes

Preparation (8 steps)

Melt the butter and sauté the onion

3 min/122°F/Velocidad 2, 5 min/248°F/Velocidad 1 50, 120

Place the butter in the Thermomix bowl and program 3 Min./50°C/Speed 2 to melt it. Add the chopped onion and sauté for 5 Min./120°C/Speed 1.

Add the ham and spices

2 min/212°F/Giro a la izquierda/Velocidad 1 100 Reverse

Incorporate the Iberian ham cut into small cubes, the nutmeg, salt and pepper to taste. Mix with the spatula and program 2 Min./100°C/Reverse rotation/Speed 1 to integrate the flavors.

Incorporate the flour and cook

Add the flour and program 5 Min./100°C/Speed 3. It is important that the flour is cooked well so that it does not taste raw.

Add the milk and thicken the dough

Thermomix® Setting
8 min/194°F/Velocidad 4 90

Pour the milk little by little through the measuring cup, while the Thermomix is running at 8 Min./90°C/Speed 4. The dough should come off the walls of the bowl.

Cool the dough

Remove the dough from the Thermomix bowl and spread it on a platter. Cover with transparent film and let it cool in the refrigerator for at least 5 hours, ideally overnight.

Form the croquettes

Once the dough is cold, form the croquettes into the desired shape. You can use two spoons or your hands.

Coat the croquettes

Pass each croquette through flour, then through beaten egg and finally through breadcrumbs, making sure they are well covered.

Fry the croquettes

Heat plenty of oil in a pan. Fry the croquettes in batches until golden brown on all sides. Remove with a slotted spoon and place on absorbent paper to remove excess oil.
