Description

This Creole marinated chicken is a true taste journey! I often prepare it for summer barbecues, and it's always a hit. The fragrant marinade, made with lime, chili and fresh herbs, infuses the meat with an exotic and slightly spicy flavor. The dog sauce, with its mixture of herbs, garlic and chili, brings a touch of freshness and vivacity. It's a convivial and tasty dish, perfect for sharing a moment of pleasure with friends or family. Accompanied by rice, it's a delight!

Ingredients (21 ingredients)

  • 4 piece Chicken thighs
  • 2 tbsp Cane sugar
  • 1 piece Onion(s)
  • 1 piece Lime(s)
  • 1 piece Small chili
  • 4 Branches Chives
  • 2 clove Garlic
  • 2 branche Thyme
  • 5 cl Water
  • to taste Salt
  • to taste Pepper
  • 4 branche Flat parsley
  • 2 clove Garlic
  • 1 piece Lime(s)
  • 1 piece Onion(s)
  • 1 piece Small chili
  • 4 Branches Chives
  • 10 cl Sunflower oil
  • 10 cl Hot water
  • to taste Salt
  • to taste Pepper

Preparation (10 steps)

Preparing the marinade

Put 4 sprigs of chives in the bowl and chop finely for 5 Sec./Stufe 5. Scrape the sides of the bowl with the spatula.

Chop the garlic and onion

Thermomix® Setting
3 sec/Speed 7

Peel 2 cloves of garlic and 1 onion, put them in the bowl and chop for 3 Sec./Stufe 7. Scrape the sides of the bowl with the spatula.

Chop the chili

Thermomix® Setting

Cut 1 small chili in half, remove the seeds and chop it finely in the bowl for 2 Sec./Stufe 5. Scrape the sides of the bowl with the spatula.

Mix the marinade

Thermomix® Setting
10 sec/Speed 3

Add 2 sprigs of thyme leaves, the juice of 1 lime, 5 cl of water, 2 tablespoons of cane sugar, salt and pepper to the bowl. Mix 10 Sek./Stufe 3.

Marinate the chicken

Place 4 notched chicken thighs in a dish with the marinade and set aside in the refrigerator overnight.

Preparing the dog sauce

Put 4 sprigs of flat parsley and 4 sprigs of chives in the bowl and chop finely for 5 Sec./Stufe 5. Scrape the sides of the bowl with the spatula.

Chop the garlic and onion for the sauce

Chop the chili for the sauce

Mix the dog sauce

Thermomix® Setting
10 sec/Speed 3

Add the squeezed juice of 1 lime, 10 cl of sunflower oil, 10 cl of hot water (not boiling), salt and pepper to the bowl. Mix 10 Sek./Stufe 3.

Barbecuing the chicken

Light the barbecue, making sure there are no flames. Cut the sugar canes into thin sections and place them on the embers. Add the barbecue grill on top and arrange the chicken thighs. Keep the marinade aside, cover the thighs with a lid. Cook for about 1h30, taking care to turn them from time to time.
