Description

These savoury oat pancakes are a fantastic option for a breakfast or a light and nutritious dinner. I have been experimenting with fitness recipes for some time and this is one of my favourites. The oats provide fibre and energy, while the Greek yogurt adds creaminess and an extra protein boost. They are very easy to prepare and can be customised with your favourite ingredients, such as ham and cheese, vegetables or even avocado. Give them a try, you'll love them! In addition, they are an excellent alternative for those looking for gluten-free options, as long as they use certified gluten-free oats. Perfect for a healthy and delicious lifestyle.

Ingredients (5 ingredients)

  • 4 piece egg whites
  • 40 gramos oat flour or ground oats
  • 2 tbsp Greek yogurt
  • 1 piece egg
  • 1 pinch salt

Preparation (5 steps)

Beat the eggs

Thermomix® Setting
15 sec/Speed 4

Place the egg whites, whole egg and a pinch of salt in the Thermomix bowl. Beat the mixture for 15 seconds at speed 4.

Incorporate the oats and yogurt

Thermomix® Setting
10 sec/Speed 3

Add the oat flour (or ground oats) and Greek yogurt to the bowl. Mix all the ingredients for 10 seconds at speed 3.

Refine the dough (optional)

Thermomix® Setting
5 sec/Speed 5

For a finer texture, beat the dough for 5 seconds at speed 5. This will help the oats integrate better.

Cook the pancakes

Heat a non-stick frying pan over medium heat. Add a few drops of oil and spread with a brush to cover the entire surface. Pour a portion of the mixture into the hot pan and cook until the edges are done.

Turn over and finish cooking

Turn the pancake over and cook until golden brown on both sides. Repeat the process with the rest of the dough, adding a little oil to the pan between each pancake.
