Description

This beetroot dip with yoghurt is a delicious and healthy dip that is ideal as a starter or finger food. The combination of beetroot, yoghurt and spices makes it a special taste experience. The dip is vegetarian and can be prepared quickly and easily. Perfect for parties or as a healthy snack in between.

Ingredients (10 ingredients)

  • 400 g Beetroot
  • 150 g Greek yoghurt
  • 1 Stück Garlic clove, peeled
  • 2 EL Lemon juice
  • 2 EL Olive oil
  • 0.5 TL Cumin powder
  • 2 EL Smooth parsley, finely chopped
  • 2 EL Walnuts, chopped
  • Salt
  • Pepper

Preparation (6 steps)

Prepare beetroot

Wash, peel and dice 400 g beetroot. Place the diced beetroot in the Softiera insert.

Cook beetroot

Pour 120 ml water into the mixing bowl. Place the Softiera insert inside. Place and close the lid and the Secuquick softline.

Cook beetroot

Heat the pot on the highest setting until the soft window, then switch to a low setting and cook in the soft area for approx. 5 minutes.

Release pressure

After the cooking time has elapsed, depressurize the pot and remove the Secuquick.

Prepare dip

Allow the cooked beetroot to cool. Then add to the mixing bowl with 150 g Greek yoghurt, 1 peeled garlic clove, 2 tbsp lemon juice, 2 tbsp olive oil, 0.5 tsp cumin powder, 2 tbsp finely chopped smooth parsley and 2 tbsp chopped walnuts and puree for 30 sec./speed 8.

Season and serve

Season the dip with salt and pepper. Arrange in bowls and sprinkle with additional parsley and walnuts.
