Description

These Thermomix® oatmeal orange slices with meringue are a delicious pastry made with oatmeal, eggs, and raw cane sugar. Preparation takes a total of 105 minutes and yields about 20 servings. Ideal as a sweet breakfast, finger food, or dessert. Particularly suitable for the winter and Christmas coffee table.

Ingredients (11 ingredients)

  • 70 g Sweet cream butter
  • 450 g Oatmeal
  • 5 Stück Eggs size M
  • 200 g Raw cane sugar
  • 1 EL Honey
  • 1 TL Wheat flour Type 550
  • 1 TL Baking powder
  • 100 g Sugar
  • 4 EL Orange marmalade
  • 4 Stück Eggs size M
  • 100 g Sugar

Preparation (10 steps)

Preheat oven

Preheat the oven to 160 °C top/bottom heat. Line a baking sheet with parchment paper.

Melt butter

Place 70 g sweet cream butter in the mixing bowl and melt for 3 min./50°C/speed 2.

Prepare oatmeal mixture

20 sec/Speed 3

Add 450 g oatmeal, 1 egg, 200 g raw cane sugar and 1 tbsp honey to the melted butter in the mixing bowl and mix for 20 sec./speed 3.

Mix flour and baking powder and fold in

Thermomix® Setting
15 sec/Linkslauf/Speed 2 Reverse

Mix 1 tsp wheat flour type 550 and 1 tsp baking powder in a separate bowl. Add the flour mixture to the mixing bowl and fold into the oatmeal mixture for 15 sec./Reverse/speed 2.

Spread dough on baking sheet and bake

Spread the dough with a spoon on the prepared baking sheet and bake in the preheated oven for 13 to 15 minutes until golden brown.

Cut slices and let cool

While the oatmeal cookie is still hot and warm, cut into 1 x 3 cm slices with a knife. Let the slices cool completely.

Beat egg whites until stiff

Place the egg white from the remaining 4 eggs in the mixing bowl and insert the butterfly whisk. Beat for 3 min./speed 3.5 until stiff.

Sprinkle in sugar

1 min/Speed 3.5

Gradually add 100 g sugar through the lid opening to the stiffly beaten egg whites and mix for another 1 min./speed 3.5 with butterfly whisk.

Spread marmalade on slices

Spread 4 tbsp orange marmalade on the cooled slices.

Pipe meringue and flambé

Fill the meringue into a piping bag and pipe onto the marmalade-covered slices. Lightly flambé with a crème brûlée torch. Caution, hot!
