Description

This shallot sauce is a real delight to accompany your meats and poultry. I often prepare it for the end of year celebrations, because it brings a festive and tasty touch to my dishes. The sweetness of the shallot, combined with the dry white wine and brown stock, creates a smooth and fragrant sauce. A little fresh chopped parsley at the end brings a note of freshness. It is a simple and quick recipe to make with the Thermomix®, ideal for enhancing your festive meals or your weeknight dinners. It is perfect to accompany a grilled steak or a roast chicken. A real treat!

Ingredients (7 ingredients)

  • 4 piece shallots
  • 10 cl brown stock
  • 10 cl dry white wine
  • 10 g butter
  • chopped parsley
  • to taste freshly ground pepper
  • to taste fine salt

Preparation (8 steps)

Chop the shallots

Thermomix® Setting
5 sec/Speed 5

Put 4 peeled shallots in the Thermomix bowl and chop for 5 Sek./Stufe 5.

Sauté the shallots

Thermomix® Setting
10 min/248°F/Speed 1 120

Add 10 g of butter to the bowl with the chopped shallots and sauté for 10 Min./120°C/Stufe 1.

Add the white wine

Thermomix® Setting
5 sec/Speed 3

Pour 10 cl of dry white wine into the bowl and mix 5 Sek./Stufe 3.

Reduce the white wine

Thermomix® Setting
5 min/212°F/Speed 2 100

Let the white wine reduce for 5 Min./100°C/Stufe 2 without the measuring cup.

Add the brown stock

Thermomix® Setting
5 sec/Speed 3

Add 10 cl of brown stock to the bowl and mix 5 Sek./Stufe 3.

Reduce the sauce

Thermomix® Setting
10 min/212°F/Speed 2 100

Let the sauce reduce until it obtains a coating consistency for 10 Min./100°C/Stufe 2 without the measuring cup.

Add the parsley and butter

Thermomix® Setting
5 sec/Linkslauf Speed 1 Reverse

Add the chopped parsley and a knob of butter to the bowl. Mix delicately for 5 Sek./Linkslauf Stufe 1.

Thermomix® Setting
5 sec/Linkslauf Speed 1 Reverse

Season with freshly ground pepper and salt or fine salt according to your taste. Mix 5 Sek./Linkslauf Stufe 1.
