Description

This vegetable paella is a vegetarian main course that is ideal for the summer. With fresh ingredients such as green beans, peppers and peas, it is rich in vitamins and fiber. Preparation takes about 40 minutes and yields 4 servings. Perfect for a light and healthy meal.

Ingredients (15 ingredients)

  • 1 Stück Onion
  • 1 Stück Garlic clove
  • 1 Stück small, red Chili pepper
  • 300 g Green beans
  • 1 Stück Red pepper
  • 1 Stück Yellow pepper
  • 0.2 g Saffron
  • 200 g Paella or Risotto rice
  • 150 g Peas, deep frozen
  • 500 ml Vegetable broth
  • 2 Stück Tomatoes
  • 2 EL Lemon juice
  • 2 EL Olive oil
  • Salt
  • Pepper

Preparation (7 steps)

Chop onion, garlic and chili pepper

Put 1 onion in the mixing bowl and chop for 3 sec./level 5. Add 1 garlic clove and chop for 3 sec./level 7. Add 1 small, red chili pepper and chop for 3 sec./level 5.

Prepare beans and peppers

Clean 300 g green beans and cut into bite-sized pieces. Clean 1 red pepper and 1 yellow pepper and cut into short strips.

Sauté onion, garlic

Thermomix® Setting

Put 2 tbsp olive oil in the mixing bowl and sauté for 3 min./120°C/level 1.

Add vegetables and rice

Put 300 g green beans, 1 red pepper, 1 yellow pepper, 1 packet saffron (approx. 0.2 g), 200 g paella or risotto rice, 150 g peas, deep frozen and 500 ml vegetable broth in the mixing bowl and mix.

Cook paella

Cook for 15 minutes/100°C/level 1.

Prepare tomatoes

Scald 2 tomatoes with boiling water, peel, core and dice.

Season paella

Carefully mix 2 diced tomatoes, 2 tbsp lemon juice, 2 tbsp olive oil, salt and pepper into the paella and season to taste.
