Description

These spinach spatzle are a delicious first course, rich in flavor. The combination of fresh spinach with cooked ham and cream creates a harmony of flavors that will win everyone over. I often prepare them for a family lunch or a dinner with friends, and they are always a success! The recipe is simple and quick, perfect for those who have little time but do not want to give up taste. A comforting and substantial dish, ideal for the spring season.

Ingredients (12 ingredients)

  • 800 g cleaned spinach
  • 300 g flour
  • 50 ml water
  • 2 uova eggs
  • nutmeg
  • fine salt
  • 30 g butter
  • 150 g diced cooked ham
  • 100 ml white wine
  • 150 ml liquid cream
  • pepper
  • fine salt

Cooking the spinach

Thermomix® Setting
10 min/212°F/Speed 1 100

Fill the Mixtopf with 1000 ml of water, add a pinch of fine salt and bring to a boil: 10 Min./100°C/Stufe 1.

Adding the spinach

5 min/212°F/Speed 1 100

Add 800 g of cleaned spinach to the Mixtopf and cook for 5 Min./100°C/Stufe 1.

Drain and squeeze the spinach

Drain the cooked spinach and squeeze it well to remove excess water. Set aside.

Preparation of the spinach cream

Thermomix® Setting
20 sec/Speed 8

Put the squeezed spinach in the Mixtopf together with 2 eggs, a pinch of fine salt, a grating of nutmeg and 50 ml of water. Blend for 20 Sek./Stufe 8 until you obtain a smooth and homogeneous cream.

Preparation of the dough

Pour the spinach cream into a bowl, add 300 g of flour and mix well with a spatula until you obtain a uniform mixture. Cover with film and let it rest for 30 minutes.

Preparation of the sauce

Thermomix® Setting
2 min/122°F/Speed 1 50

Put 30 g of butter in the Mixtopf and melt for 2 Min./50°C/Stufe 1.

Brown the ham

Thermomix® Setting
3 min/248°F/Speed 1 120

Add 150 g of diced cooked ham and brown for 3 Min./120°C/Stufe 1.

Deglaze with white wine

Thermomix® Setting
2 min/Varoma/Speed 1 Varoma

Deglaze with 100 ml of white wine and cook for 2 Min./Varoma/Stufe 1 without the measuring cup to evaporate the alcoholic part.

Add the cream and reduce the sauce

Thermomix® Setting
5 min/194°F/Speed 1 90 Reverse

Add 150 ml of liquid cream, fine salt to taste, pepper to taste and cook for 5 Min./90°C/Stufe 1, Linkslauf, to reduce the sauce.

Cooking the spatzle

Bring abundant salted water to a boil in a pot. Using a large-holed grater, slide the mixture into the boiling water, forming vermicelli. Cook until they float to the surface, drain them and pass them in a bowl with cold water to stop the cooking.

Toss the spatzle

2 min/194°F/Speed 1 90 Reverse

Drain the spatzle and put them in the Mixtopf with the sauce. Mix for 2 Min./90°C/Stufe 1, Linkslauf, to flavor.
