Prepare the vegetable broth according to your favorite recipe. Alternatively, use ready-made vegetable broth.

Chop the garlic

Add the tomato purée, a pinch of salt, a grind of black pepper and a pinch of dried oregano. Cook: 10 Min./100°C/Stufe 1.

Toast the rice

Add the rice and toast: 3 Min./120°C/Stufe 1.

Cooking the risotto

Add the boiling vegetable broth until it covers the rice. Cook: 15 Min./100°C/Linkslauf Stufe 1. Add hot broth if necessary during cooking.

Add the tomato sauce

Add the previously prepared tomato sauce and continue cooking: 5 Min./100°C/Linkslauf Stufe 1. Add hot broth if necessary.

Stir the risotto

At the end of cooking, stir in a drizzle of raw extra virgin olive oil. Mix gently with the spatula.

Serve

Serve the risotto hot, garnished with a pinch of dried or freshly chopped chilli pepper and a pinch of dried oregano.
