Description

This is a pasta dish that I often prepare during the summer, when peppers are at their best! Creamy fettuccine with peppers are an explosion of color and flavor. The sweetness of red and yellow peppers blends perfectly with the creaminess of the cream, creating an enveloping and delicious sauce. It is a simple and quick dish to prepare, perfect for a family dinner or a lunch with friends. Furthermore, it is an excellent vegetarian option. If you want, you can add a pinch of chili pepper for a spicy touch. I love it like this!

Ingredients (9 ingredients)

  • 320 g Fettuccine
  • 1 piece Red pepper
  • 1 piece Yellow pepper
  • 1 piece Onion
  • 200 ml Fresh cream
  • 1 pinch Salt
  • 1 pinch Black pepper
  • 1 bunch Parsley
  • 3 tbsp Olive oil

Preparation (8 steps)

Preparation of the peppers

Wash, open the red and yellow peppers, remove the core with the stem, seeds and white ribs. Cut the peppers into sticks.

Chop onion and parsley

Put 1 onion and a bunch of parsley in the bowl. Chop for 3 Sec./Stufe 5.

Sauté the onion

Add 3 tablespoons of olive oil to the bowl and sauté for 3 Min./120°C/Stufe 1.

Cook the peppers

7 min/Varoma/Speed 1 Varoma

Add the peppers cut into sticks to the bowl. Cook for 7 Min./Varoma/Stufe 1.

Add the cream and finish cooking

Thermomix® Setting
3 min/194°F/Speed 1 90

Add 200 ml of fresh cream, salt and black pepper to taste. Cook for 3 Min./90°C/Stufe 1.

Cook the fettuccine

In the meantime, cook 320g of fettuccine in abundant salted water according to the instructions on the package.

Stir the pasta

1 min/Speed 2/Linkslauf Reverse

Drain the fettuccine al dente and pour them into the bowl with the pepper sauce. Stir for 1 Min./Stufe 2/Linkslauf.

Serve

Serve the hot fettuccine immediately, sprinkle with fresh chopped parsley and black pepper to taste.
