Description

This courgette ragout is an explosion of summer flavors! Perfect for dressing pasta, it is a simple and tasty vegan dish. The courgettes, cut into cubes, combine with the tomato puree and the mixed fried vegetables to create a rich and fragrant sauce. A touch of white wine and fresh basil complete the dish. Ideal for a quick lunch or a light dinner, this ragout is an excellent alternative to the classic meat ragout. It is prepared in a short time with the Thermomix® and the result is always guaranteed! Ingredients (10 ingredients)

  • 500 g courgettes
  • 600 ml tomato puree
  • 150 g mixed fried vegetables
  • 200 ml white wine
  • 2 cucchiai tomato concentrate
  • 250 ml water
  • extra virgin olive oil
  • fine salt
  • basil
  • 320 g pasta

Preparation of the fried vegetables

Pour extra virgin olive oil to taste into the jug. Add the mixed fried vegetables (150 g) and fine salt to taste and cook for 10 Min./120°C/Stufe 1, mixing with the spatula.

Cutting the courgettes

In the meantime, cut the courgettes (500 g) into cubes.

Browning the courgettes

5 min/248°F/Speed 1, 2 min/Varoma/Speed 1 120

Add the cubed courgettes to the jug and brown for 5 Min./120°C/Stufe 1. Deglaze with white wine (200 ml) and let it evaporate for 2 Min./Varoma/Stufe 1 without the measuring cup.

Addition of tomato concentrate

1 min/212°F/Speed 1 100

Add the tomato concentrate (2 tablespoons) and mix for 1 Min./100°C/Stufe 1 to dissolve it in the cooking juices.

Addition of tomato puree

Thermomix® Setting
1 min/212°F/Speed 1 100

Add the tomato puree (600 ml) and mix for 1 Min./100°C/Stufe 1 to obtain a homogeneous sauce.

Cooking the ragout

Thermomix® Setting
40 min/212°F/Speed 1 100 Reverse

Add the water (250 ml), the basil to taste and a pinch of fine salt to taste. Cook for 40 Min./100°C/Stufe 1, Linkslauf, stirring gently with the spatula every now and then.

Dressing the pasta

Cook the pasta (320 g) according to the instructions on the package. Drain the pasta and dress with the courgette ragout.
