Description

This stew with pork and vegetables Almería style is a comforting and flavorful dish, perfect for cold days.   • 150 g Pork loin
  • 1 piece Large potato
  • 1 piece White bone
  • 1 piece Green pepper
  • 1 piece Leek
  • 1 bote Pre-cooked chickpeas
  • 1 piece Ripe red tomato
  • 1 piece Small onion
  • 3 clove Garlic
  • Oil
  • Salt
  • 1 l Homemade meat broth

Preparation (4 steps)

Preparation of the sauté

In a medium frying pan, heat a drizzle of oil. Once hot, add 3 sliced garlic cloves and brown them. Next, add 1 small chopped onion and brown. Then, incorporate 1 ripe red tomato, peeled and chopped, and sauté.

Sauté of meat and vegetables

In the same frying pan, add 150 g of chopped pork loin and sauté. Add 1 chopped leek, 1 chopped green pepper, and 1 chopped large potato. Sauté everything together.

Cooking the stew

Add 1 white bone and 1 litre of homemade meat broth to the frying pan. Turn up the heat and let it boil for 50 minutes.

Incorporation of the chickpeas

After 50 minutes, turn up the heat a little more and add 1 jar of pre-cooked chickpeas. Cook for about 10 minutes so that they are properly integrated. Taste for salt and adjust if necessary.
