Description

This spring carrot flan is a light and refreshing appetizer, ideal for springtime. The cooked carrots are pureed and processed with gelatin, whole cream and vegetable stock into a fine flan. The preparation is quick and easy, perfect for a light lunch or as part of a festive menu.

Ingredients (4 ingredients)

  • 200 g Spring carrots cooked
  • 2 Bl. Gelatin
  • 1.5 dl Whole cream
  • 0.4 dl Vegetable stock

Preparation (6 steps)

Puree carrots

Put 200 g spring carrots cooked in the mixing bowl and puree for 30 sec./level 8.

Prepare gelatin

Soak 2 sheets of gelatin according to the package instructions.

Heat whole cream

3 min/194°F/Speed 2 194°F

Put 155 g whole cream in the mixing bowl and heat for 3 min./90°C/level 2.

Dissolve gelatin

Thermomix® Setting
10 sec/Speed 3

Squeeze out the soaked gelatin and add to the hot whole cream. Stir for 10 sec./level 3 until the gelatin is completely dissolved.

Add vegetable stock

Thermomix® Setting
10 sec/Speed 3

Add 40 g vegetable stock and the pureed carrots and stir for 10 sec./level 3.

Let cool

Fill the mixture into any molds and let it cool in the refrigerator.
