Description

This cheesecake with berry sauce, prepared in the Thermomix®, is a creamy dessert for special occasions. The main ingredients are quark, eggs, lemon and vanilla. The preparation takes a total of 85 minutes, with the active working time being about 30 minutes. The recipe yields 8 servings and is ideal as a festive cake or a sweet end to a family meal.

Ingredients (16 ingredients)

  • 3 Stück Eggs, size M
  • 1 TL Vanilla paste
  • 1 Prise Salt
  • 210 g Sugar
  • 50 g Flour
  • 1 Pck. Vanilla pudding powder
  • 1000 g Quark
  • 0.5 Stück Lemon (juice)
  • 200 g Milk
  • 125 g Cream
  • Powdered sugar for dusting
  • 2 EL Sugar (for berry sauce)
  • 1 TL Cornstarch
  • 1 Prise Cinnamon, ground
  • 100 g Cherry or currant juice
  • 125 g Frozen mixed forest berries

Preparation (9 steps)

Prepare oven

Preheat the oven to 180°C top/bottom heat. Line the base of the springform pan with baking paper.

Mix eggs, vanilla, salt and sugar

Place 3 eggs, 1 tsp vanilla paste, 1 pinch of salt and 210 g sugar in the mixing bowl and mix for 30 seconds/speed 4.

Stir in flour and pudding powder

Add 50 g flour and 1 packet vanilla pudding powder and stir in for 1 minute/speed 4.

Mix in quark and lemon juice

Thermomix® Setting

Add 1 kg quark (or 500 g quark and 500 g curd cheese) and juice of ½ lemon and mix for 30 seconds/speed 5.

Mix milk and cream

Thermomix® Setting
40 sec/Speed 4

Add 200 g milk and 125 g cream and mix for 40 seconds/speed 4 to form a smooth mass. Spread the mixture evenly into the pan.

Bake cheesecake

Pour the mixture into the prepared springform pan and bake in the preheated oven for approx. 55 minutes. After 30 minutes, run a sharp knife along the edge of the cheesecake. After baking, let the cake cool in the oven with the oven door slightly open.

Prepare berry sauce

Clean the mixing bowl. Put 2 tbsp sugar, 1 tsp cornstarch, 1 pinch of cinnamon and 100 g cherry or currant juice in the mixing bowl and mix for 30 seconds/speed 3.

Heat berry sauce

8 min/212°F/Gentle stir speed 212°F Reverse

Add 125 g frozen mixed forest berries and heat for 8 minutes/100°C/Reverse/soft stirring.

Serve cheesecake

Dust the cake with powdered sugar before serving and serve with the berry sauce.
