Description

This gingerbread-pistachio cheesecake with lingonberries is a festive dessert perfect for the Christmas season. The combination of spicy gingerbread, creamy pistachio cream, and fruity lingonberries makes this cake a special treat. With a working time of 45 minutes and a cooling time of 3 hours, it is ideal for special occasions.

Ingredients (11 ingredients)

  • 50 g Butter + butter for the tin
  • 250 g Gingerbread variation
  • 20 g Manuka honey
  • 100 g Pistachio cream
  • 6 Blatt Gelatin
  • 350 g Double cream cheese
  • 250 ml Heavy cream
  • 100 g Caster sugar
  • 1 Pkg. Bourbon vanilla sugar
  • 150 g Wild lingonberries
  • 25 g Unsalted chopped pistachios

Preparation (6 steps)

Prepare gingerbread-honey crumbs

Add butter, gingerbread variation and Manuka honey to the mixing bowl and chop for 10 sec/speed 6.

Prepare tart pan

Grease a tart pan (24 cm Ø) with some butter. Line the bottom and edge of the pan evenly with a thick layer of the crumbs, pressing firmly with a spoon. Spread pistachio cream on the gingerbread base. Refrigerate.

Prepare cream cheese frosting

Soak gelatin in cold water. Add double cream cheese, heavy cream, caster sugar and Bourbon vanilla sugar to the mixing bowl and whip until stiff for 3 min/speed 4.

Dissolve and stir in gelatin

Squeeze the gelatin well and place in a small saucepan. Add 150 g of the cream cheese frosting and heat in the pot, stirring, until the gelatin has completely dissolved. Quickly stir the mixture into the remaining cream.

Complete cheesecake

Fill the cream into the pan. Add wild lingonberries in dollops and marble with a spoon. Refrigerate for at least 3 hours.

Serve

Serve cheesecake garnished with chopped pistachios.
