Description

This spice cake with chocolate glaze, prepared in the Thermomix®, is a festive cake classic with butter, sugar, eggs and flour. The preparation takes about 100 minutes and yields 12 servings. Ideal for the winter coffee table, as a dessert or for breakfast. The recipe is perfect for anyone who wants to bake a delicious cake for Christmas or other festive occasions.

  • 200 g Butter
  • 1 Prise(n) Salt
  • 150 g Sugar
  • 1 Pck. Vanilla Sugar
  • 4 Stück Eggs (Size M)
  • 150 ml Milk
  • 375 g Wheat Flour Type 405
  • 1 Pck. Baking Powder
  • 150 g Coating (Whole Milk)
  • 1 Schote(n) Vanilla
  • Ground Cloves
  • 1 EL Cinnamon
  • 50 g Whole Milk Chocolate

Preparation (11 steps)

Stir butter, salt, sugar and vanilla sugar until creamy

Put 200 g butter, 1 pinch salt, 150 g sugar and 1 packet vanilla sugar into the mixing bowl and stir for 3 min/speed 4 until creamy.

Stir in eggs and milk

Thermomix® Setting

Add 4 eggs (size M) and 150 ml milk one after the other into the mixing bowl and stir in for 1 min/speed 3.

Mix and fold in flour and baking powder

Thermomix® Setting
30 sec/Speed 3

Put 375 g wheat flour type 405 and 1 packet baking powder into the mixing bowl and fold in for 30 sec/speed 3. Use a spatula to loosen everything from the edge.

Divide dough

Remove the dough from the mixing bowl and halve it.

Melt coating

3 min/122°F/Speed 2 50

Put 150 g coating (whole milk) in pieces into the mixing bowl and chop for 5 sec/speed 5. Then melt for 3 min/50°C/speed 2.

Mix coating under dough

Thermomix® Setting
20 sec/Speed 3

Add the melted coating to one half of the dough and stir for 20 sec/speed 3.

Vanilla, cloves and cinnamon to the light dough

Thermomix® Setting

Halve the vanilla pod lengthwise and scrape out the pulp. Add the pulp, 2 level tsp ground cloves and 1 tbsp Ceylon cinnamon to the other half of the dough and stir for 20 sec/speed 3.

Fill dough into shape

Grease the loaf pan (approx. 25 cm length, 1 1/4 liter capacity). First fill half of the light dough, then half of the dark dough into the pan. Repeat this with the remaining dough. Mix the dough in a spiral shape with a fork.

Bake cake

Bake the cake in the preheated oven (electric stove: 175 °C/ convection: 150 °C/ gas: see manufacturer) for 60-70 minutes. Take the cake out and let it cool down.

Melt coating

3 min/122°F/Speed 2 50

Put 250 g coating in pieces into the mixing bowl and chop for 5 sec/speed 5. Then melt for 3 min/50°C/speed 2.

Cover and decorate cake

Thermomix® Setting
5 sec/Speed 8

Cover the cake with the melted coating. Let the coating cool for about 10 minutes. Put 50 g whole milk chocolate into the mixing bowl and chop for 5 sec/speed 8. Use a vegetable peeler to peel rolls from the chocolate and decorate the cake with it.
