Description

This mulled wine cake, prepared in the Thermomix®, is a festive dessert with butter, sugar, eggs and gingerbread spice. Preparation takes about 75 minutes, of which 25 minutes are active working time. The recipe yields 12 servings and is ideal for a winter coffee table or as a Christmas pastry. A cake recipe for special occasions.

Ingredients (13 ingredients)

  • 150 g Butter
  • 150 g Sugar
  • 1 Pck. Vanilla sugar
  • 3 Stück Eggs
  • 300 g Flour
  • 1 Pck. Baking powder
  • 1 TL Gingerbread spice
  • 1 TL Cinnamon
  • 0.5 TL Cloves, ground
  • 125 ml Mulled wine
  • 50 g Almonds, ground
  • 50 g Hazelnuts, ground
  • Icing sugar for dusting

Preparation (7 steps)

Grind almonds and hazelnuts

Add almonds and hazelnuts to the mixing bowl and chop for 8 sec./speed 6. Transfer and set aside.

Whisk butter, sugar and vanilla sugar until fluffy

Add butter, sugar and vanilla sugar to the mixing bowl and whisk for 3 min./speed 3 until fluffy.

Add eggs

Add eggs one at a time and stir in for 20 sec./speed 3 each time.

Mix flour, baking powder and spices

Thermomix® Setting
30 sec/Speed 4

Add flour, baking powder, gingerbread spice, cinnamon and cloves to the mixing bowl and mix for 30 sec./speed 4.

Add mulled wine and nuts

Thermomix® Setting

Add mulled wine and the ground almonds and hazelnuts and stir in for 30 sec./speed 3.

Bake dough

Pour the dough into a greased and floured Bundt cake pan and bake in a preheated oven at 175°C top/bottom heat for approx. 50 minutes. Do a stick test!

Let the cake cool and dust with icing sugar

After baking, let the cake cool in the pan for about 10 minutes, then turn it out and let it cool completely. Dust with icing sugar before serving.
