Description

This recipe for melon fans with chicken and raspberries is a refreshing and colorful appetizer or light lunch, perfect for warm summer days. The combination of sweet melon, tender chicken and tart raspberries is simply delicious. I like to make this dish when I have guests because it's so easy to prepare and always goes down well. Preparing the sauce in the Thermomix® is super quick and easy. An absolute highlight is the yoghurt ice cream, which gives the dish a special touch. If you like it a little lighter, you can also leave out the yoghurt ice cream. Enjoy your meal!

Ingredients (7 ingredients)

  • 4 piece Melon
  • Chicken breast(s)
  • 2 barquette(s) Raspberry(ies)
  • Sauce
  • 200 g Yoghurt ice cream
  • Salt
  • Pepper

Preparation (7 steps)

Cook chicken breast

Season the chicken breast with salt and pepper. Then fry in a pan with a little oil until golden brown and cooked through. Remove from the pan and let cool.

Prepare melon

Quarter the melons and cut off part of the height. Remove the seeds. Cut small triangles from the pulp of the melon and set aside.

Wash raspberries

Wash the raspberries carefully and set aside some for decoration.

Dice chicken breast

Cut the cooled chicken breast into small cubes.

Cut lettuce

Wash the lettuce leaves, roll them up and cut into fine strips.

Prepare sauce

Thermomix® Setting
10 sec/Speed 4

Place the ingredients for the sauce in the mixing bowl and mix for 10 sec/speed 4. Add the diced chicken breast and raspberries and carefully fold in for 5 sec/reverse rotation speed 2.

Fill and arrange

Fill each melon with the chicken and raspberry mixture. Arrange on plates and garnish with lettuce strips, melon triangles and the remaining raspberries. Serve with yoghurt ice cream.
