Description

These homemade meatballs in vegetable sauce are a comforting and flavorful dish, perfect to enjoy with the family. The minced meat is mixed with egg, bread soaked in milk and a touch of garlic and parsley, creating tender and juicy meatballs. The sauce, made with onion, carrot and white wine, gives it a special and delicious touch. It is an ideal dish for cold days and can be accompanied with french fries or white rice. A classic that never fails and that always triumphs at home! It is also an excellent way to incorporate vegetables into the diet of the little ones.

Ingredients (15 ingredients)

  • 0.5 kg minced meat
  • 1 piece Egg
  • 50 g bread crumb
  • 1 clove garlic
  • 100 ml milk
  • Extra virgin olive oil
  • Salt
  • Parsley
  • 2 piece onions
  • 1 piece Carrot
  • 2 clove garlic
  • 1 tbsp flour
  • 250 ml white wine
  • Extra virgin olive oil
  • Salt

Preparation (11 steps)

Soak the bread crumb

In a bowl, soak 50 g of bread crumb in 100 ml of milk. Let stand while you prepare the rest of the ingredients.

Prepare the meatball mixture

Finely chop 1 clove of garlic in the Thermomix: 3 Seg./Velocidad 7. Remove the chopped garlic from the glass and reserve. In a large bowl, mix 1/2 kg of minced meat, the chopped garlic, 1 egg, the bread crumb soaked in milk (draining the excess milk), chopped parsley to taste and a pinch of salt. Mix all the ingredients well with your hands until you get a homogeneous mixture.

Form the meatballs

Take small portions of the meat mixture and shape them into rounded shapes with your hands. They should be of similar size so that they cook evenly.

Flour and fry the meatballs

Pass the meatballs through flour, making sure they are well covered. Heat plenty of oil in a frying pan over medium-high heat. Fry the meatballs in the pan until they are golden brown on all sides. Remove the meatballs from the pan and place them on absorbent paper to remove excess oil. Reserve.

Chop the vegetables for the sauce

Peel and cut 2 onions, 1 carrot and 2 cloves of garlic into medium pieces. Put the vegetables in the Thermomix and chop: 5 Seg./Velocidad 5.

Sauté the vegetables

Add extra virgin olive oil to the Thermomix glass with the chopped vegetables. Sauté: 8 Min./120°C/Velocidad 1.

Add flour and white wine

Add 1 tablespoon of flour to the glass and sauté: 2 Min./120°C/Velocidad 1. Pour 250 ml of white wine and cook: 5 Min./100°C/Velocidad 2.

Cook the sauce

Add salt to taste and, if necessary, a little water or broth. Cook the sauce: 20 Min./100°C/Velocidad 2.

Crush the sauce

Crush the sauce: 30 Seg./Velocidad 10. If you prefer a finer sauce, crush for longer.

Cook the meatballs in the sauce

Pour the sauce into a large saucepan. Introduce the fried meatballs into the sauce. Cook over low heat for approximately 10 minutes, stirring occasionally so that the meatballs are well soaked in the sauce.

Serve

Serve the meatballs in hot sauce. If you wish, garnish with chopped fresh parsley. You can accompany with french fries, white rice or mashed potatoes.
