Description

Savory spinach dumplings in creamy mountain cheese sauce, prepared in the Thermomix®. This vegetarian dish is ideal for the cold season and offers a delicious combination of spinach, cheese and stale bread rolls. Preparation takes about 75 minutes and yields 4 servings. Perfect as a filling main course for the whole family.

Ingredients (17 ingredients)

  • 400 g Leaf spinach - frozen
  • 1 Stück Onion
  • 250 g Stale bread rolls
  • 2 EL Butter
  • 125 ml Milk
  • 50 g Mountain cheese - grated
  • 3 EL Breadcrumbs
  • 2 Stück Eggs
  • 1 TL Salt
  • nach Geschmack Pepper
  • nach Geschmack Nutmeg
  • 30 g Butter
  • 20 g Flour
  • 400 ml Milk
  • 150 g Mountain cheese - grated
  • nach Geschmack Salt
  • nach Geschmack Pepper

Preparation (10 steps)

Prepare spinach and chop onion

Thaw the frozen leaf spinach and squeeze well with your hands to remove excess water. Then roughly chop the spinach and set aside. Peel and quarter the onion and place in the mixing bowl. Chop for 3 sec./level 5. Scrape down the sides with the spatula.

Sauté onions

3 min/248°F/Speed 1 120

Add 2 tbsp butter to the chopped onions in the mixing bowl and sauté for 3 min./120°C/level 1.

Heat milk and season

Thermomix® Setting
3 min/194°F/Speed 1 90

Add 125 ml milk, 1 tsp salt, pepper and nutmeg to the onions in the mixing bowl and heat for 3 min./90°C/level 1.

Prepare bread rolls

Cut the stale bread rolls into cubes and place in a large bowl.

Prepare dumpling mixture

Pour the hot milk mixture over the bread roll cubes. Let everything cool down a little. Then add 50 g grated mountain cheese, 3 tbsp breadcrumbs, the chopped spinach and 2 eggs. Knead well with your hands until a homogeneous mass is formed. Let the mixture rest for 15 minutes.

Form dumplings

With wet hands, form 12 dumplings from the dumpling mixture.

Cook dumplings

Bring water to a boil in a pot and add salt. Reduce the heat so that the water only simmers. Carefully add the dumplings to the simmering water and let them steep for 12-15 minutes until cooked.

Prepare cheese sauce - roux

3 min/212°F/Speed 1 100

For the cheese sauce, add 30 g butter to the mixing bowl and melt for 3 min./100°C/level 1. Then add 20 g flour and stir for 2 min./100°C/level 2.

Prepare cheese sauce - completion

Thermomix® Setting
5 min/194°F/Speed 3 90

Gradually add 400 ml milk while stirring and simmer for 5 min./90°C/level 3 until the sauce thickens. Add 150 g grated mountain cheese and stir for 1 min./60°C/level 2 until the cheese has melted. Season with salt and pepper.

Serve

Serve the cooked spinach dumplings with the cheese sauce.
