Description

These cornstarch alfajores with chocolate coating are a delight that always triumphs. The soft and delicate dough, combined with the dulce de leche and the crunchy touch of chocolate, makes them an irresistible bite. Perfect for an afternoon coffee, a birthday or simply to treat yourself. The recipe is a bit laborious, but the result is worth it. I prepare them often and always receive praise. Go ahead and try them, you won't regret it! You can use dark or milk chocolate, according to your preference. They are delicious!

Ingredients (12 ingredients)

  • 300 gramos 0000 flour
  • 1 cucharada postre baking powder
  • 0.25 cucharada postre sodium bicarbonate
  • 1 pinch salt
  • 40 gramos sugar
  • 150 gramos butter
  • 1 piece egg
  • 1 cucharada postre vanilla essence
  • 1 piece orange zest
  • 1 cucharada sopera honey
  • 400 gramos dulce de leche repostero
  • 100 gramos chocolate coating

Prepare the ingredients

Make sure you have all the ingredients at room temperature, especially the egg and butter. This is crucial for a good emulsion.

Cream the butter and sugar

Place 150 g of butter and 40 g of sugar in the Thermomix bowl. Mix for 30 seconds/Stufe 3 until a smooth and creamy consistency is obtained.

Add the wet ingredients

20 sec/Speed 4

Add 1 egg, 1 dessert spoon of vanilla essence, orange zest and 1 tablespoon of honey to the bowl. Mix for 20 seconds/Stufe 4 until they are well emulsified.

Incorporate the dry ingredients

In a separate bowl, mix 300 g of 0000 flour, 1 dessert spoon of baking powder and ¼ dessert spoon of sodium bicarbonate. Sift the mixture directly into the Thermomix bowl. Mix for 20 seconds/Stufe 3 until the ingredients are integrated.

Form the dough and chill

Remove the dough from the bowl and form a ball. Stretch it between two sheets of cling film and refrigerate in the fridge for 20 minutes.

Cut the lids

After the cooling time, cut the alfajores lids with a cutter of about 5 centimeters in diameter.

Bake the lids

Arrange the lids on a floured baking tray and cook them in the oven preheated to 160 ºC for about 12 minutes or until the base is lightly golden.

Cool the lids

When the lids are cooked, take them to a rack to cool completely.

Fill the alfajores

Fill the lids by spreading 400 g of dulce de leche repostero on the curved part of each one. Join the lids to form the alfajores.

Melt the chocolate

3 min/122°F/Speed 2 50

Place 100 g of chopped chocolate coating in the Thermomix bowl. Melt for 3 Min./50°C/Stufe 2.

Cover the alfajores

Bathe the alfajores one by one with the melted chocolate, trying to make a thin layer and covering the edges. Place them on a rack to harden the chocolate.

Cool and enjoy

Reserve the alfajores until the chocolate dries and enjoy them.
