Description

This American spice soft cake is a comforting delight, perfect to accompany a coffee or tea. I often prepare it for Sunday brunch, and it always disappears in the blink of an eye!   • 300 g flour

In the Thermomix bowl, add 300 g of flour, 3 eggs, 200 g of sugar, 200 g of butter cut into pieces, 1 sachet of baking powder, a pinch of cinnamon, a pinch of nutmeg and a few drops of vanilla essence extract. Mix everything for 20 Sek./Stufe 4. Let the dough rest for 5 minutes in the bowl.

Mold preparation and baking

Preheat the oven to 180°C (th.6). Butter and flour a cake tin. Pour the preparation into the mold. Bake for 20 minutes.

Unmold the cake and let it cool on a wire rack before serving.

Ah, the American spice soft cake… This cake evokes for me the autumn afternoons spent at my grandmother's, where the smell of cinnamon and nutmeg floated throughout the house. She didn't use a Thermomix®, of course, but the result was just as comforting. I adapted her recipe to make it faster and easier with my favorite robot. Each ingredient plays a crucial role in the success of this cake. The flour, preferably type T55, provides the structure. The butter, melted, gives it its incomparable softness and richness. The sugar, in addition to sweetening, contributes to the tender texture. The eggs bind the ingredients and provide moisture. The baking powder ensures a good rise, for an airy cake. And of course, the spices! Cinnamon and nutmeg are the stars, bringing warmth and depth of flavor. The vanilla extract enhances the whole. The use of the Thermomix® greatly simplifies the preparation. It is important to respect the mixing time indicated, 20 seconds at speed 4. This allows you to obtain a homogeneous dough without working it too much, which could make the cake rubbery. Resting for 5 minutes after mixing allows the flour to hydrate, which contributes to a softer texture. Remember to butter and flour your mold well to facilitate unmolding. Cooking is crucial: 20 minutes at 180°C is generally sufficient, but monitor carefully. The cake is cooked when the blade of a knife inserted in the center comes out clean. For a vegetarian version, you can replace the butter with good quality vegetable margarine. For a vegan version, replace the butter with melted coconut oil and the eggs with applesauce (about 100g of applesauce to replace two eggs). You can also vary the spices: add ground ginger, cloves, or even a pinch of cayenne pepper for a bolder touch. An orange or lemon zest will bring a welcome freshness. This American spice soft cake is delicious as is, sprinkled with icing sugar. You can also accompany it with a scoop of vanilla ice cream, a custard, or a red fruit coulis. It goes perfectly with a coffee, a tea, or a glass of warm milk. The cake keeps well for 2 to 3 days at room temperature, in an airtight box. You can also freeze it, whole or in portions, for later tasting. For advance preparation, you can prepare the dough the day before and keep it in the refrigerator. Take it out 30 minutes before baking to bring it back to room temperature.
