Description

This anise melon velouté is a refreshing and original appetizer, perfect for hot summer days. I love preparing this soup when the melons are at their peak, because their flavor is incomparable. Green anise brings a subtle and fragrant touch that goes wonderfully with the sweetness of the melon. The preparation is simple and quick with the Thermomix®, and the result is always a success. Feel free to add a few fresh mint leaves for an extra touch of freshness. This velouté is ideal for a summer brunch or a cocktail party.

Ingredients (8 ingredients)

  • 1 piece Melon
  • 1 piece Red onion
  • 1 c. à soupe Anise seed
  • 1 c. à soupe Olive oil
  • 1 c. à soupe Brown sugar
  • 5 c White port
  • 1 c White pepper
  • 4 piece Dried hibiscus flower

Preparation of the red onion

Thermomix® Setting
3 sec/Speed 5

Peel the red onion and cut it in half. Put the red onion in the Thermomix bowl and chop for 3 Sec./Level 5.

Cooking the red onion

3 min/248°F/Speed 1 120

Add the olive oil to the Thermomix bowl. Sauté the red onion for 3 Min./120°C/Level 1, without browning.

Adding the spices and port

10 sec/Speed 2

Add the anise seeds, brown sugar and white port to the Thermomix bowl. Mix for 10 Sec./Level 2.

Preparation of the melon

Open the melon, remove the rind, seeds and fibers. Cut the melon flesh into pieces and put it in a salad bowl.

Mixing the melon

30 sec/Speed 8

Pour the contents of the Thermomix bowl over the melon pieces in the salad bowl. Put everything in the Thermomix bowl and mix finely for 30 Sec./Level 8, gradually increasing the speed.

Seasoning and cooling

5 sec/Speed 3

Taste and add the white pepper according to your taste. Mix for 5 Sec./Level 3. Cover tightly and place in the refrigerator for at least 2 hours.

Preparation of hibiscus flowers

Meanwhile, swell the dried hibiscus flowers in a bowl of cold water.

Service

When serving, distribute the melon soup in transparent containers (glasses, cups...) and decorate with the hibiscus flowers.
