Description

This lemon apple cake is a real comfort food, perfect for breakfast or a snack. The combination of juicy apples and the citrusy scent of lemon makes it irresistible. The preparation is quick and easy thanks to the Thermomix®, which helps us to obtain a soft and homogeneous dough. I often prepare it when I have guests at home and it is always a great success. A tip? Serve it warm with a sprinkling of icing sugar! Ideal for an autumn cuddle.

  • 160 g sugar
  • sugar for the surface
  • 100 g seed oil
  • 250 g flour
  • 8 g baking powder
  • 1 piece lemon for zest and juice
  • 3 piece large apples

In the Thermomix bowl, insert the eggs and sugar. Mix for 3 Min./speed 4/no temperature, until a light and fluffy mixture is obtained.

Add the seed oil to the bowl and mix for 20 Sec./speed 3/no temperature.

Flavoring with lemon

Grate the zest of a lemon and add it to the bowl. Squeeze the lemon juice (about 50 ml) and pour it into the bowl. Mix for 10 Sec./speed 3/no temperature.

Incorporation of flour

Add the flour to the bowl and mix for 30 Sec./speed 4/no temperature. Use the spatula to make sure the flour is well incorporated.

Addition of baking powder

Add the baking powder to the bowl and mix for 10 Sec./speed 3/no temperature, to mix it with the dough.

Preparation of the apples

Peel the apples and cut them into thin slices (about 2-3 mm) with a mandolin.

Incorporating the apples into the dough

Pour the apple slices into the bowl with the dough. Gently mix with the spatula to mix the apples with the rest of the ingredients.

Baking in the oven

Pour the dough into a 24 cm diameter cake tin, previously greased and floured, with a parchment paper disc on the bottom. Level the surface well and sprinkle with a few handfuls of granulated sugar. Bake in a preheated ventilated oven at 170°C for 40-45 minutes (with a static oven increase the temperature by 10 degrees).
