Description

This apple sauce pull-apart bread from the Thermomix® is a delicious cake with yeast, apples, cinnamon and spelt flour. Preparation takes about 120 minutes, of which 45 minutes are active working time. The recipe makes one pull-apart bread and is ideal as a breakfast or dessert. Perfect for anyone who loves festive and aromatic pastries.

Ingredients (11 ingredients)

  • 20 g Yeast
  • 130 g Butter
  • 150 g Milk
  • 150 g brown Sugar
  • 1 TL Vanilla extract
  • 0.25 TL Cinnamon
  • 500 g Spelt flour 630
  • 2 Stück Eggs
  • 300 g Apple sauce
  • 1 TL Cinnamon
  • 2 TL Cinnamon

Preparation (9 steps)

Heat yeast mixture

Put yeast, butter, milk, 50 g brown sugar and 1/4 tsp cinnamon and vanilla extract into the mixing bowl and heat for 2 min./37°C/speed 2.

Prepare dough

Thermomix® Setting
8 min/Kneading speed

Add spelt flour and eggs and process into a dough for 8 min./kneading stage.

Let the dough rise

Let the dough rise in a warm place for 1 hour.

Preheat oven

Preheat the oven to 220°C top/bottom heat.

Roll out the dough

After rising, roll out the dough into a rectangle (approx. 60x40 cm).

Distribute apple sauce

Spread the dough with apple sauce.

Prepare sugar-cinnamon mixture

Mix the remaining brown sugar (100 g) with 1-2 tsp of cinnamon in a bowl and sprinkle over the top.

Cut and fold strips

Cut the dough into strips approx. 5 cm wide, fold like an accordion and layer in a baking dish.

Bake

Bake on the lowest rack for about 40 minutes.
