Description

This rustic apple nut bread from the Thermomix® combines apples, brown sugar, cinnamon, and raisins for an aromatic taste experience. The preparation of this vegetarian bread takes about 230 minutes, with 30 minutes of active work. The recipe yields 12 servings and is ideal for a nutty breakfast, an autumnal dessert, or as part of a Christmas buffet. Suitable for anyone who loves a moist and aromatic bread.

Ingredients (14 ingredients)

  • 400 g Apples
  • 100 g brown sugar
  • 1 Pck. vanilla sugar
  • 1 Spritzer lemon juice
  • 1 Msp. cinnamon (ground)
  • 100 g raisins
  • 4 cl rum
  • butter or oil for the mold
  • 125 g chopped hazelnuts
  • 125 g chopped walnuts
  • 250 g spelt flour (Type 630 or whole wheat)
  • 1 Pck. baking powder
  • 1 EL baking cocoa
  • 1 Prise(n) salt

Preparation (8 steps)

Prepare apples

Thermomix® Setting

Wash, peel, quarter, and core 3 apples (approx. 400 g). Place the apple pieces in the mixing bowl and chop for 5 sec/speed 5. Transfer the chopped apples to a bowl.

Prepare apple mixture

Mix the chopped apples in a bowl with 100 g brown sugar, 1 packet vanilla sugar, 1 splash of lemon juice, and 1 pinch of cinnamon (ground). Let the mixture steep for a few hours or overnight.

Soak raisins

Soak 100 g raisins in 4 cl rum and set aside.

Prepare nuts

Lightly toast 125 g chopped hazelnuts and 125 g chopped walnuts in a pan without fat and set aside.

Mix dry ingredients

Place 250 g spelt flour (Type 630 or whole wheat), 1 packet baking powder, 1 tbsp baking cocoa, and 1 pinch of salt in the mixing bowl and mix for 10 sec/speed 4.

Prepare dough

30 sec/Speed 4/Linkslauf Reverse

Add the soaked apple mixture and raisins along with the toasted nuts to the dry ingredients in the mixing bowl. Mix everything for 30 sec/speed 4/Reverse. If necessary, use the spatula to scrape down the sides.

Baking

Preheat the oven to 150 °C top/bottom heat. Grease a loaf pan (approx. 25 cm length) with butter or oil. Pour the dough into the prepared loaf pan and bake for about 1 hour 15 minutes.

Let cool

Remove the apple bread from the oven, let it rest in the pan for another 10 minutes, then turn it out and let it cool on a wire rack. Wrapped in aluminum foil, the bread will keep for several days.
