Description

This rustic fruit bread with hazelnuts, prepared in the Thermomix®, is a hearty treat for breakfast or snack. The combination of lemon, dried apricots and plums, apples and hazelnuts provides a wintery taste experience. The recipe from the category bread and rolls is vegetarian and ideal for Christmas time. The preparation time is 45 minutes, the total time including rest periods 570 minutes, and yields 2 servings.

  • 0.5 Stück Lemon
  • 150 g dried Apricots
  • 150 g dried Plums
  • 800 g sour Apples
  • 150 g whole Hazelnuts
  • 250 g Brown Sugar
  • 0.5 TL Cinnamon
  • 1 Msp. Ground Cloves
  • 500 g Flour
  • 1 Päckchen Baking Powder
  • 175 g Margarine
  • 3 Stück Eggs (Size M)

Preparation (9 steps)

Squeeze lemon juice and prepare fruit

Press the juice from half a lemon. Cut 150 g dried apricots and 150 g dried plums into cubes or pieces. Wash 800 g apples, quarter them, remove the core and dice the rest. Mix the apple cubes with the lemon juice and the diced dried fruit in a bowl. This is a preparation step that takes place outside of the Thermomix.

Chop nuts and mix with fruit

Chop 150 g hazelnuts coarsely. Add the chopped hazelnuts together with 250 g brown sugar, 0.5 tsp cinnamon and 1 pinch of ground cloves to the diced fruit in the bowl. Mix everything well and let it steep covered overnight. This is a preparation step that takes place outside of the Thermomix.

Preheat oven and drain fruit

Preheat the oven to 150 °C circulating air (150 °C top/bottom heat). Drain the pickled fruit in a sieve. This is a preparation step that takes place outside of the Thermomix.

Mix flour and baking powder

Put 500 g flour and 1 packet baking powder into the mixing bowl and mix for 10 sec/level 4.

Prepare dough

Thermomix® Setting
2 min/Kneading speed

Put 125 g margarine in flakes and 3 eggs (size M) into the mixing bowl. Knead everything for 2 min./kneading stage.

Fold in fruit and nut mixture

Thermomix® Setting
30 sec/Linkslauf Speed 2 Reverse

Add the drained fruit and nut mixture to the mixing bowl and mix everything for 30 sec/reverse rotation speed 2. Use the spatula to push the mixture away from the edge of the mixing bowl if necessary.

Shape and bake loaves

Form two loaves with floured hands and place them on a baking tray lined with baking paper. This is a preparation step that takes place outside of the Thermomix.

Melt margarine

Thermomix® Setting
2 min/122°F/Speed 1 50

Put 50 g margarine in the mixing bowl and melt for 2 min./50°C/level 1.

Brush and bake loaves

Brush the fruit breads with the melted margarine and bake them in the preheated oven for about 60 minutes. This is a baking step that takes place outside of the Thermomix.
