Description

This spiced bread with dried fruits and nuts is prepared in the Thermomix® and is ideal for the Christmas season. The main ingredients are lemon, dried apricots and plums, apples and hazelnuts, refined with Christmas spices. The preparation time is 570 minutes, of which 60 minutes are active working time, the recipe yields 16 servings. The bread is suitable as a hearty breakfast or Christmas dessert and is vegetarian.

Ingredients (13 ingredients)

  • 0.5 Stück Lemon
  • 150 g dried apricots
  • 150 g dried plums
  • 800 g sour apples (e.g. Boskoop)
  • 150 g whole hazelnuts
  • 250 g Brown sugar
  • 0.5 TL Cinnamon
  • 1 Msp. Clove powder
  • 500 g Flour
  • 1 Päckchen Baking powder
  • 125 g Margarine
  • 50 g Margarine
  • 3 Stück Eggs (size M)

Preparation (7 steps)

Squeeze lemon juice and prepare fruit

Squeeze the juice from half a lemon. Cut 150 g of dried apricots and 150 g of dried plums into cubes or pieces. Wash 800 g of apples, quarter them, remove the core and dice the rest. Mix the diced apples with the lemon juice and the diced dried fruit in a bowl. Set the bowl aside.

Chop nuts and mix with fruit

Put 150 g of hazelnuts into the mixing bowl and chop them roughly for 3 sec./speed 5. Add the chopped nuts to the prepared fruit in the bowl. Add 250 g brown sugar, 0.5 tsp cinnamon and 1 pinch of clove powder. Mix everything well and leave covered overnight.

Preheat the oven and drain the fruit

Preheat the oven to 150 °C circulating air (150 °C top/bottom heat). Drain the pickled fruit in a sieve.

Prepare flour mixture

10 sec/Speed 4

Put 500 g flour and 1 packet baking powder into the mixing bowl and mix for 10 sec./speed 4.

Knead dough

Thermomix® Setting
2 min/Kneading speed

Add 125 g margarine in flakes and 3 eggs (size M) to the flour in the mixing bowl and knead everything for 2 min./kneading stage to form a crumbly dough.

Fold in the fruit and nut mixture

Thermomix® Setting
30 sec/Linkslauf Speed 2 Reverse

Put the drained fruit and nut mixture into the mixing bowl and mix everything for 30 sec./reverse rotation speed 2 until the ingredients are well mixed. Use the spatula to scrape the ingredients from the edge of the mixing bowl if necessary.

Shape and bake loaves

Shape two loaves with floured hands and place them on a baking sheet lined with baking paper. Melt 50 g margarine in a saucepan on the stove. Brush the fruit breads with the melted margarine and bake them in the preheated oven for about 60 minutes.
